FETA, WHEAT BERRY SALAD
Another favorite wheat salad. Reminds me of a Greek salad. Everyone loves this. Have been asked MANY times for the recipe. Adapted from a recipe in "The Best of Gourmet 1994". Sometimes I'll add more dressing if it absorbs it all. Might be yummy with some marinated artichokes too. I like to use the basil and sun-dried tomato variety of Feta.

WHEAT BERRY SALAD WITH FRUIT & FETA
Hearty, flavorful and filling. My husband and I were both suprised at how delicious this was. The included ingredients really give a full, complete flavor to the dish. I compiled this after reading through several recipes and not being satisfied. This would be a great side dish, but we eat it as a one-dish meal.

Steps:
- Starting with about 7 Cups of water, boil wheat for 1 hour, keeping the water level about an inch above the wheat. (You will need to add water periodically.).
- Roast Almonds by baking on a cookie sheet or pan at 400* for 10 minutes, stirring/flipping after 5 minutes. Set aside to cool, then chop to desired size.
- Peel and cut apples, finely grate orange zest, juice orange (chunks in the juice are okay.).
- When wheat is done boiling (it should have a tender, rubbery consistency), drain and rinse with cold water. Drain well.
- My feta was herb-soaked in a garlic, olive oil, lemon juice, rosemary, dill mix. It adds a lot to the salad.
- Mix everything together. You can serve it right away, but it gets even better the next day.

Tips:
- Choose the right wheat berries. For this salad, you'll want to use hard red wheat berries. They have a chewy texture and nutty flavor that holds up well in a salad.
- Cook the wheat berries properly. Rinse the wheat berries before cooking and then cook them according to the package directions. Be sure not to overcook them, or they will become mushy.
- Use fresh, flavorful ingredients. The fresher your ingredients, the better your salad will taste. Use ripe tomatoes, crisp cucumbers, and flavorful feta cheese.
- Don't be afraid to experiment. This salad is a great base for experimentation. Try adding different vegetables, fruits, or nuts. You can also change up the dressing to suit your taste.
Conclusion:
Feta wheat berry salad is a healthy, delicious, and versatile dish that can be enjoyed for lunch, dinner, or a side dish. It's packed with protein, fiber, and vitamins, and it's a great way to get your daily dose of fruits and vegetables. So next time you're looking for a healthy and satisfying meal, give this feta wheat berry salad a try.
