Time 20m

Yield 2 serving(s)

Number Of Ingredients 12

1/2 cup flour
salt and pepper
2 tablespoons salad oil
2 (6 ounce) boneless skinless chicken breasts
2 tablespoons olive oil
2 cloves crushed garlic
1/4 cup diced onion
1/4 cup red wine
2 tomatoes, skinned,seeded and chopped
1/4 cup Greek olive, pitted and chopped
2 tablespoons fresh basil, chopped
1/4 cup feta cheese

Steps:

  • Salt and pepper chicken and dredge in flour.
  • Saute in salad oil over medium heat for about 3 minutes per side or until done.
  • Remove from pan and set aside.
  • Place olive oil in same pan and add garlic and onion and saute for 2 minutes.
  • Add wine and tomatoes and cook for one minute.
  • Add olives and cook for another minute.
  • Add salt and pepper to taste.
  • Remove pan from heat and add basil and feta cheese.
  • Place chicken breasts on serving plates and top with tomato olive mixture.

Tips:

  • Use fresh, ripe ingredients: This will ensure the best flavor in your dish. Look for tomatoes that are deep red and plump, feta cheese that is firm and crumbly, and olives that are briny and flavorful.
  • Don't overcook the chicken: Chicken can quickly become dry and tough, so it's important to cook it just until it is cooked through. Use a meat thermometer to check the internal temperature of the chicken, and remove it from the heat when it reaches 165 degrees Fahrenheit.
  • Use a good quality olive oil: Olive oil is a key ingredient in this dish, so it's important to use a good quality oil that has a fruity, flavorful taste. Look for extra virgin olive oil that is made from cold-pressed olives.
  • Use a variety of olives: Different olives have different flavors, so using a variety of olives will add depth and complexity to your dish. Try using a combination of Kalamata, green, and black olives.
  • Garnish with fresh herbs: Fresh herbs like basil, oregano, or thyme will add a pop of color and flavor to your dish. Chop them finely and sprinkle them over the chicken before serving.

Conclusion:

This Feta Tomato Olive Chicken is a flavorful, healthy, and easy-to-make dish that is perfect for a weeknight meal. The combination of juicy tomatoes, briny olives, and creamy feta cheese is sure to please everyone at your table. Serve it with a side of rice or roasted vegetables for a complete meal.
