3/4 cup crumbled feta
2 scallions, thinly sliced,including green
1/2 cup fresh spinach, chopped
1 lb salmon fillet, sliced to make 2 filets
olive oil

  • To serve, slice carefully with a sharp, serrated knife.
  • Enjoy!

Tips:

  • Choose a high-quality salmon fillet: Look for wild-caught salmon for the best flavor and nutritional value.
  • Make sure the feta cheese is fresh: Fresh feta should be firm and crumbly, not too soft or runny.
  • Use fresh spinach leaves: Fresh spinach leaves will wilt down as they cook, so you don't need to chop them beforehand.
  • Don't overcook the salmon: Salmon is a delicate fish that can easily become dry and overcooked. Aim to cook it for about 10 minutes per inch of thickness.
  • Serve the salmon immediately: Salmon is best served hot out of the oven, with a squeeze of lemon juice and a sprinkle of fresh herbs.

This feta spinach stuffed salmon is a delicious and easy-to-make dish that's perfect for a weeknight dinner. The salmon is moist and flaky, the feta cheese is creamy and tangy, and the spinach adds a pop of color and nutrition.
