3 tablespoons kosher salt, plus more to taste
2 pounds russet potatoes, cut into wedges
3 tablespoons unsalted butter, melted
Freshly ground black pepper
One 8-ounce jar roasted red bell peppers (see Cook's Note)
2 ounces feta, coarsely chopped
3/4 cup toasted walnuts or almonds
2 tablespoons olive oil
1 tablespoon honey
2 teaspoons lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon crushed red pepper
1 clove garlic
Kosher salt and freshly ground black pepper

Steps:

  • For the fries: Dissolve the salt in a large bowl of cold water and add 1 cup of ice cubes. Submerge the potato wedges and soak for 20 minutes.
