3 each medium red and green apples, cut into thin wedges

1 pound coarsely shredded Swiss cheese
1 bunch green onions, chopped
½ cup chopped banana peppers
½ cup seeded and finely chopped jalapeno peppers (wear gloves)
½ cup mayonnaise, or as needed
1 head red cabbage

Steps:

  • In a bowl, lightly mix the Swiss cheese, green onions, banana peppers, jalapeno peppers, and mayonnaise. Cover and refrigerate 24 hours to blend flavors. Mix in more mayonnaise before serving, if desired.
  • To serve, cut core out of cabbage and discard. Cut a thick slice from the bottom of the cabbage; use a fork to pull the inner leaves out of the cabbage to leave a hollowed out bowl. Pull several of the outer leaves slightly open and fold them back to make the bowl more attractive; serve the chilled dip in the hollowed cabbage.

2 tablespoons taco seasoning
1/8 teaspoon garlic powder

1 (8 ounce) box Philadelphia Cream Cheese
3 tablespoons Hellmann's mayonnaise
1 teaspoon garlic powder (more or less to taste)
1/3 red pepper, finely diced
1/3 green pepper, finely diced
3 slices red onions, finely diced

WINTER SQUASH FESTIVE DIP

I make this dip and then use either an ornamental pumpkin or turban squash that I've hollowed out and put it in it. It's super pretty as a center piece and it keeps people out of the kitchen while you are cooking Thanksgiving dinner. We have nut allergies so I don't do this, but a friend who uses this recipe adds pine nuts and pecans on the top as a garnish.

2 pounds turban squash - halved, seeded, and cut into 3-inch pieces
1 tablespoon extra-virgin olive oil, or as needed
coarse salt and freshly ground black pepper to taste
2 heads garlic, top third sliced off and discarded
10 tablespoons unsalted butter, at room temperature, divided
8 scallions, white and light-green parts only, sliced into 1-inch pieces
2 chipotle peppers (from a can of chipotle peppers in adobo sauce)
2 cups sour cream
1 ¼ cups grated Parmesan cheese
8 ounces cream cheese, room temperature
4 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place squash on a rimmed baking sheet. Drizzle olive oil over squash and season with salt and pepper. Place garlic in a piece of aluminum foil, drizzle olive oil over garlic, and loosely wrap foil around garlic. Place garlic packet on the baking sheet with squash.
  • Bake in the preheated oven until squash is soft and golden brown, about 50 minutes. Cool squash slightly.
  • Melt 1/4 cup butter in a skillet over medium heat; cook and stir scallions until softened, about 4 minutes.
  • Scoop meat from cooked squash and transfer to a food processor. Squeeze garlic cloves from skins and add to squash in food processor; add scallions and chipotle peppers. Pulse until mixture is smooth. Add remaining butter, sour cream, Parmesan cheese, cream cheese, and lemon juice; pulse just until combined but not smooth. Season dip with salt and pepper.
  • Refrigerate dip for 1 hour.

I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! 10 ounces frozen chopped broccoli, thawed and well drained
1 (2 ounce) jar diced pimentos, drained (can substitute with red peppers diced fine)
1 teaspoon fresh garlic, minced
1/2 cup parmesan cheese
1 cup lowfat mozzarella cheese, shredded (1/2 cup divided in recipe)

Steps:

  • Mix together dressing, broccoli, pimientos, (garlic if using), parmesean cheese and 1/2 cup mozzarella cheese.
  • Spread into a 1 quart baking dish or a 9-inch pie plate.
  • Bake in a preheated oven set at 350 degrees for 20-25 minutes or until heated through. Sprinkle with remaining 1/2 cup mozzarella cheese and bake an additional 5 minutes or until cheese is melted.
