Provided by Ina Garten

Categories     appetizer

Yield 4 servings

Number Of Ingredients 11

1/4 cup freshly squeezed orange juice
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 cup minced shallots (1 large)
1 tablespoon honey
1/2 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 cups baby arugula, washed and spun dry
1/8th seedless watermelon, rind removed, and cut in 1-inch cubes
12 ounces good feta cheese, 1/2-inch diced
1 cup (4 ounces) whole fresh mint leaves, julienned

Steps:

  • Whisk together the orange juice, lemon juice, shallots, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If not using within an hour, store the vinaigrette covered in the refrigerator.
  • Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with enough vinaigrette to coat the greens lightly and toss well. Taste for seasonings and serve immediately.

Tips:

  • Choose ripe, flavorful watermelon: The sweeter the watermelon, the better the salad will be. Look for watermelons that are heavy for their size and have a deep red color.
  • Use fresh fennel: Fennel has a delicate, anise-like flavor that pairs perfectly with watermelon. Be sure to use fresh fennel, as dried fennel will not have the same flavor.
  • Don't overdress the salad: A light dressing is all you need to enhance the flavors of the watermelon, fennel, and feta. If you overdress the salad, it will become soggy.
  • Serve the salad chilled: This salad is best served chilled. You can make it ahead of time and store it in the refrigerator for up to 24 hours.

Conclusion:

This fennel, watermelon, and feta salad with sweet balsamic vinaigrette is a refreshing and flavorful summer salad. It's easy to make and perfect for a light lunch or dinner. The combination of sweet watermelon, crunchy fennel, and salty feta is irresistible. Drizzle the salad with a sweet balsamic vinaigrette for an extra burst of flavor.
