FENNEL, RADISH AND CUCUMBER SALAD WITH TUNA DRESSING (TONNATO)

Fennel, Radish and Cucumber Salad with Tuna Dressing (Tonnato) image

This dressing is your basic Caesar with tuna substituting for anchovies. It is very simple and very versatile. We served it drizzled over radishes, cucumbers and fennel. But I challenge you to find a vegetable this dressing doesn't go well with. It's great on boiled beets, raw tomatoes, green beans... I could go on and on but have already exhausted my welcome in this sentence. You get the point, eat more vegetables.

Categories     side-dish

Time 10m

Yield 4 servings

Number Of Ingredients 11

Two 5-ounce cans tuna packed in water, drained
1/2 cup mayonnaise
1/2 cup canola oil
1/2 cup cold water
1 tablespoon freshly squeezed lemon juice, plus more for serving
1/3 garlic clove, finely grated
Kosher salt
1/2 pound red radishes, trimmed and chopped
2 cucumbers, chopped
1 bulb fennel, trimmed and roughly chopped
1 bunch flat-leaf parsley leaves, chopped

Steps:

  • For the dressing: Put the tuna, mayonnaise, canola oil, water, lemon juice, garlic and some salt in a food processor and puree until very smooth, about 1 minute.
  • For the salad: Put the radishes, cucumbers, fennel and parsley in a large bowl.
  • Drizzle the dressing over the fennel mixture. Top with a little more lemon juice and toss to coat.

Tips:

  • Choose the right fennel and cucumber. For the best flavor, use fresh, crisp fennel and cucumbers. Look for fennel bulbs that are firm and white, with no blemishes. The cucumbers should be firm and have a deep green color.
  • Slice the fennel and cucumber thinly. This will help the flavors to meld and make the salad more refreshing.
  • Use a sharp knife to slice the fennel and cucumber. This will help to prevent the vegetables from bruising.
  • Add some herbs to the salad. Fresh herbs, such as dill, parsley, or basil, will add a nice flavor to the salad.
  • Dress the salad with a simple vinaigrette. A simple vinaigrette made with olive oil, vinegar, and salt and pepper is all you need to dress this salad.
  • Serve the salad immediately. This salad is best served fresh. If you make it ahead of time, the fennel and cucumber will start to wilt.

Conclusion:

Fennel and cucumber salad is a refreshing and healthy salad that is perfect for a summer meal. It is easy to make and can be tailored to your own taste preferences. With its unique flavor and crunchy texture, fennel and cucumber salad is a great way to add some variety to your next meal.
