Time 25m

Number Of Ingredients 7

8-10 pieces Bone-in chicken of your choice
1 cup buttermilk ((*see note))
1/4 teaspoon cayenne pepper
1/4 tablespoon red wine vinegar
dash of salt and pepper to taste
1 cup tapioca starch ((*see note))
2 cups hot oil for frying ((*see note))

Steps:

  • Put all ingredients (except chicken) into a bowl and whisk until fluffy.
  • Put the raw chicken into a large dish and pour the marinade over the butchered chicken.
  • Move chicken around to make sure all of the raw chicken is all covered in the marinade.
  • Cover with plastic wrap and refrigerate for 12 hours.
  • Drain marinaded chicken in a large strainer.
  • Place chicken in the tapioca flour and toss it around to cover the whole piece of chicken.
  • Let the chicken rest 2-3 minutes on a baking pan.
  • Gently heat oil in a pre-seasoned cast iron skillet. If you have a deep fryer, that is great! I would use that instead. The oil should be 350-375 F degrees before adding the chicken pieces.
  • Fry the chicken for 10 minutes on one side. Flip the chicken to cook the other side another 10 minutes. (Do this if you are not fully submerging your chicken in the hot oil. After you cook each side of the chicken, check the internal temperature of 165 F degrees. The total cook time would be around 20 minutes, but it depends on the cut of chicken you are using. If you are deep frying the chicken it will take less time for your chicken to cook.
  • Season the chicken with salt and pepper.

FEARLESS "FRIED" CHICKEN

Fearless

This is taken from Chatelaine's "Quickies Chicken" recipe book. We make this fairly regularly, and I have to say this has all of the flavour of traditional fried chicken with a fraction of the calories.

Time 50m

Yield 4 serving(s)

Number Of Ingredients 11

4 skinless chicken breasts (or whatever you fancy)
1 egg white
1/2 cup buttermilk
1/2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon salt
1/2-1 teaspoon cayenne
2 tablespoons vegetable oil

Steps:

  • Preheat oven to 425F (220C).
  • Whisk the egg white and buttermilk together, then pour into a pie plate.
  • Measure all dry ingredients into a paper or plastic bag and mix.
  • Dip one breast (or whatever) into the buttermilk mixture and place in the seasoning bag. Close top and gently shake to evenly coat. Place on a baking sheet with shallow sides. Repeat with remaining chicken. Discard the remainder of the seasoning.
  • Using a pastry brush, evenly brush the seasoning-coated chicken with the vegetable oil. This amount of oil is essential for a crispy crust.
  • Bake uncovered until crisp and golden - approx 40-45 minutes.

Tips:

  • Use a well-seasoned cast iron skillet. This will help to evenly distribute heat and prevent sticking.
  • Make sure the chicken is completely dry before frying. This will help to ensure that the skin gets crispy and doesn't steam.
  • Use a high-quality frying oil. This will help to prevent the chicken from tasting greasy.
  • Maintain a constant oil temperature. This will help to ensure that the chicken cooks evenly.
  • Don't overcrowd the pan. This will prevent the chicken from cooking evenly.
  • Fry the chicken until it is golden brown and cooked through. The internal temperature of the chicken should reach 165°F (74°C).
  • Let the chicken rest before serving. This will help to allow the juices to redistribute throughout the meat.

Conclusion:

Fried chicken is a delicious and versatile dish that can be enjoyed by people of all ages. By following these tips, you can make sure that your fried chicken turns out perfectly every time. Whether you're serving it for a special occasion or just a weeknight dinner, fried chicken is sure to be a hit.
