OVEN BAKED HADDOCK

Oven Baked Haddock image

We'd invited a couple of families over for dinner, and our daughter Joyce and her husband, Josh, said they were going to bring some fresh haddock. Josh wanted to find just the right recipe to prepare, and this is the one he chose. The topping--sliced plum tomatoes plus bread crumbs mixed with herbs and vegetables--adds nice flavor and color. It made a hit, and everyone really enjoyed the meal.

FAVORITE BAKED HADDOCK

Favorite Baked Haddock image

This is our favorite haddock recipe. It is also excellent using flounder. Using Miracle Whip here may sound strange, but it is SO good. Everyone who has ventured to try it, loves it. I hope you do, too.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 5

2 lbs fresh boneless haddock fillets
1 small onion, finely chopped
butter
Miracle Whip
italian seasoning

Steps:

  • Preheat oven to 325 degrees F.
  • Lightly grease a large cookie sheet with butter.
  • Sprinkle half the onion evenly over cookie sheet.
  • Cut fillets into 2 or 3 pieces.
  • I make thick pieces thinner by slicing part way with a knife and spreading flat.
  • Lay fillets on onion in a single layer.
  • Coat fillets evenly, and not too thickly, with Miracle Whip.
  • (I use my finger to spread it.) Sprinkle evenly with remaining half onion.
  • Sprinkle each piece of fish lightly with Italian seasoning.
  • Bake at 325 degrees F until done, about 15-20 minutes.

Tips:

  • Choose Fresh Haddock: Opt for fresh haddock fillets or steaks that are firm and have a mild, briny aroma. Avoid fillets with a slimy texture or an off-putting odor.
  • Season Wisely: Don't shy away from using a generous amount of salt and pepper to season the haddock. This simple seasoning duo will enhance the natural flavor of the fish.
  • Use Quality Butter: When searing the haddock, use high-quality unsalted butter for a rich and flavorful crust. Clarified butter is also a good option as it has a higher smoke point and won't burn as easily.
  • Don't Overcook: Haddock is a delicate fish that can easily become dry and overcooked. Keep an eye on the cooking time and remove the fish from the heat once it flakes easily with a fork.
  • Garnish Elegantly: Before serving, garnish the baked haddock with fresh herbs like parsley, dill, or chives. A squeeze of lemon juice can also add a bright and tangy flavor.

Conclusion:

Baked haddock is a versatile and delicious dish that can be enjoyed for lunch or dinner. Whether you prefer a simple preparation with just a few ingredients or a more elaborate recipe with a flavorful sauce or crust, there's a baked haddock recipe out there to suit your taste. With its mild flavor and flaky texture, haddock pairs well with various sides, including roasted vegetables, mashed potatoes, or a fresh salad. So next time you're looking for a healthy and satisfying seafood meal, give baked haddock a try - you won't be disappointed!
