Sumac is available at Middle Eastern food stores. It may be left out of this salad, but the flavor to me is important to the overall taste.

Tips:

  • Use ripe, flavorful tomatoes. This is key for a great-tasting fattoush. Look for tomatoes that are deep red and have a firm texture.
  • Toast the pita bread before using it. This will give it a nice crunchy texture and help it to hold up better in the salad.
  • Use a variety of fresh herbs. This will add lots of flavor and complexity to the salad. Some good options include parsley, cilantro, mint, and dill.
  • Don't overcrowd the salad. Too many ingredients will make it difficult to toss and will result in a soggy salad.
