Time 1h

Number Of Ingredients 11

1 tsp coconut oil (or canola)
1 garlic clove (crushed)
1/4 cup onion (minced)
1 scallion (chopped)
1 sprig fresh thyme
15.5 oz can red kidney beans (rinsed and drained)
2 cups uncooked long grain rice
salt and fresh ground pepper (to taste)
2 1/4 cups water
13.5 oz can (1 3/4 cups light coconut milk)
1 whole scotch bonnet hot pepper (not chopped)

Steps:

  • In a medium heavy saucepan, heat oil over medium heat; add garlic, scallion, onion and thyme.
  • Sauté a few minutes, then add rice, beans and stir.
  • Add the coconut milk, water, salt and fresh pepper and place the whole scotch bonnet pepper in the pot, stir to combine and bring to a boil.
  • Remove and discard the hot pepper and continue to cook the rice until almost all the liquid is absorbed and just skims the top.
  • Cover; reduce heat to low; simmer for 25 minutes.
  • Remove from heat and keep covered for 10 additional minutes to allow the steam to finish cooking the rice (do not be tempted to lift the lid before that).
  • Serve hot.

Tips:

  • Soak the beans overnight: This will help to reduce the cooking time and make the beans more digestible.
  • Use a variety of beans: This will add flavor and texture to the dish. Try using a combination of red beans, black beans, and pinto beans.
  • Add vegetables to the pot: This will make the dish more nutritious and flavorful. Try adding onions, celery, carrots, and bell peppers.
  • Use smoked sausage or ham hocks: This will add a rich, smoky flavor to the dish. If you are using ham hocks, be sure to remove the bone before serving.
  • Season the dish with Creole seasoning: This will give the dish a classic Louisiana flavor. You can also add other spices, such as garlic powder, onion powder, and cayenne pepper.
  • Serve the dish with rice: This is the traditional way to serve red beans and rice. You can also serve it with cornbread or mashed potatoes.

Conclusion:

Red beans and rice is a delicious and satisfying dish that is perfect for a Mardi Gras celebration or any other special occasion. It is also a relatively easy dish to make, and it can be tailored to your own taste preferences. So next time you are looking for a hearty and flavorful meal, give red beans and rice a try!
