Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 6

4 medium russet potatoes
1 tablespoon butter-flavored fat-free margarine
1 tablespoon minced fresh garlic (3 or 4 cloves)
1 1/4 cups nonfat milk
3/4 teaspoon salt
1/8 teaspoon ground black pepper

Steps:

  • Preheat oven to 400 degrees.
  • Bake the potatoes by first spraying them with oil cooking spray and then baking them in the preheated oven for 1 hour until they are tender.
  • Cool.
  • Remove about half of the skin and mash the potatoes.
  • Leave the rest of the skin in.
  • Melt the butter in a large saucepan over medium heat, then add the garlic and saute for 5 minutes.
  • Add the potatoes and remaining ingredients to the pan and cook for 5 to 10 minutes while stirring often until mashed potatoes are hot.

Tips:

  • Choose the right potatoes: Yukon Gold or russet potatoes are the best choices for mashed potatoes, as they are both starchy and will yield a smooth and creamy texture.
  • Don't overcook the potatoes: Overcooked potatoes will become gummy and watery. Cook them until they are tender but still hold their shape.
  • Drain the potatoes thoroughly: This will help to remove excess water and make the potatoes lighter and fluffier.
  • Use a potato ricer or food mill: This will help to create a smooth and lump-free texture.
  • Add milk and butter gradually: Start with a small amount of milk and butter, and then add more until you reach the desired consistency.
  • Season the potatoes to taste: Salt, pepper, and garlic powder are all classic seasonings for mashed potatoes. You can also add other herbs and spices, such as chives, parsley, or rosemary.
  • Serve the potatoes immediately: Mashed potatoes are best served hot and fresh.
