1 cup walnut halves
DRESSING:
1/3 cup olive oil
3 tablespoons white wine vinegar
1-1/2 teaspoons Dijon mustard
2 garlic cloves, minced
1/2 teaspoon sugar
1/4 teaspoon dried oregano
1/8 teaspoon salt
1/8 teaspoon dried parsley flakes

5 cups torn romaine

1 cup (150 g) grape or cherry tomatoes (sliced into halves or quarters)
1 cup (120 g) sliced Persian cucumbers
1 green bell pepper (seeds and ribs removed, chopped into 1-inch pieces)
1 small red onion (thinly sliced then rinsed to remove harsh bite )
⅓ cup (65 g) pitted Kalamata olives
3 oz. (85 g) feta cheese (crumbled or cut into ½-inch cubes)
¼ cup (55 ml) extra virgin olive oil
2 tablespoons red wine vinegar
1 garlic clove (minced)
½ lemon (juiced)
½ teaspoon dried oregano (more for sprinkling)

500g cherry tomatoes
3 tbsp extra virgin olive oil
pinch of chilli flakes
3 garlic cloves, lightly bashed
200g block of feta
350g pasta (penne, rigatoni or your favourite shape)
small bunch of basil, leaves picked

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the tomatoes, oil, chilli flakes and garlic together in a medium baking dish. Roast for 15 mins, then nestle the block of feta into the middle of the dish. Season everything well and bake for a further 20-25 mins, or until the feta is turning golden and the tomatoes have softened and turned jammy.
  • Cook the pasta following pack instructions, then drain, reserving a mugful of the cooking water. Remove and discard the garlic cloves from the baked feta, then break up the cheese using a fork. Tip the pasta into the dish along with a splash of the reserved cooking water, and gently toss to combine with the cheese and tomatoes - the pasta should be well-coated in a creamy, cheesy sauce. Add another splash of the cooking water to loosen, if needed. Season well with black pepper, then scatter over the basil to serve.

1/2 cup coarsely chopped fresh parsley (or 3 tablespoons dry parsley works fine too)
1/2 teaspoon basil
1/4 cup parmesan cheese (grated or powder will work)
1/3 cup olive oil (I have also used coconut oil, but not recommended unless you prefer the flavor)
3 -5 tablespoons lemon juice (to taste)
3 -5 tablespoons red wine vinegar (also to taste)
1/4 cup pine nuts (preferably toasted)
2 -4 garlic cloves, minced (depending on how much you love garlic!)
1/4 teaspoon salt
1/2 teaspoon fresh ground pepper
2 -3 cups farfalle pasta (or spiral, or other, about 6 ounces)
8 cups boiling water
1 teaspoon salt
1 cup crumbled feta cheese (about 8 ounces)

1 English cucumber (sliced at about a 1/4 inch and halved or quartered)
