Time 1h15m

Yield 12

Number Of Ingredients 9

⅔ cup white sugar
¼ cup margarine, softened
2 eggs
1 cup mashed bananas
¼ cup water
1 ⅔ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
  • In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
  • Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
  • Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

I know, I know, this site certainly doesn't need another banana bread recipe...but this is truly a wonderful, moist, nearly fat-free loaf. There's just the fat in the eggs, and you could probably substitute Egg-Beaters (although I've never tried it). Even my "why do we have to eat healthy" family love it....and they all swear to hate any baked goods made with whole wheat flour!

Tips:

  • Use overripe bananas. The riper the bananas, the sweeter and more flavorful your banana bread will be.
  • Mash the bananas well. This will help to create a smooth and even batter.
  • Use a combination of flours. This will give your banana bread a more complex flavor and texture.
  • Don't overmix the batter. Overmixing can make your banana bread tough.
  • Bake the banana bread until a toothpick inserted into the center comes out clean. This will ensure that the banana bread is cooked through.
  • Let the banana bread cool completely before slicing and serving. This will help to prevent the banana bread from crumbling.

Conclusion:

Fat-free banana bread is a delicious and healthy snack or breakfast option. It is easy to make and can be customized to your own taste preferences. With a few simple tips, you can make a fat-free banana bread that is moist, flavorful, and perfect for any occasion.
