Recipe VIDEO above. A chicken salad with a fantastic Thai chilli lime dressing with a great tangy-sweet-salty-spicy balance that South East Asian food is known for. Using Chilli Garlic Sauce is a great way to thicken dressing as well as adding more layers of flavour. Serves 2 as a main, 4 as a side.

THAI-STYLE CHICKEN SALAD ON CUMIN QUICK BREAD

Thai-Style Chicken Salad on Cumin Quick Bread image

Categories     Sandwich     Chicken     No-Cook     Cocktail Party     Mayonnaise     Lime     Mint     Cilantro     Gourmet

Yield Makes about 34 sandwiches

Number Of Ingredients 14

For chicken salad
1/4 cup fresh lime juice
1 teaspoon salt
1/2 teaspoon chili powder
1/4 cup finely chopped fresh coriander
1/4 cup finely chopped fresh mint leaves
a pinch of sugar
2 poached whole skinless boneless chicken breasts (about 1 1/4 pounds), minces (about 3 cups)
1/3 cup finely chopped shallot
1/3 cup thinly sliced scallion
1/4 cup mayonnaise, or to taste
1 loaf of Cumin Quick Bread
about 1/2 cup mayonnaise for garnish
finely chopped fresh parsley leaves for garnish

Steps:

  • Make chicken salad:
  • In a large bowl whisk together the lime juice, the salt, the chili powder, the coriander, the mint, and the sugar, stir in the chicken, the shallot, and the scallion, and stir in the mayonnaise. (The chicken salad may be made 1 day in advance and kept overed and chilled.)
  • Cut the bread into 1/3-inch-thick slices, spread each of half the slices with a scant 2 tablespoons of the chicken salad, and top the chicken salad with the remaining slices. Cut each sandwich in half. Spread a thin layer of the mayonnaise on one of the edges of each sandwich and dip it in the parsley.

Tips:

  • Use fresh, high-quality ingredients: This will make a big difference in the flavor of your salad. Look for ripe tomatoes, crisp cucumbers, and fresh herbs.
  • Don't be afraid to adjust the ingredients to your taste: If you like things spicy, add more chili peppers. If you prefer a sweeter salad, add more sugar or honey. And if you're not a fan of cilantro, feel free to leave it out.
  • Make sure your chicken is cooked thoroughly: This is especially important if you're using raw chicken. Cook it until it reaches an internal temperature of 165 degrees Fahrenheit.
  • If you're short on time, you can use rotisserie chicken instead of cooking your own: This will save you a lot of time and effort.
  • Serve the salad immediately after it's made: This will prevent the vegetables from wilting.

Conclusion:

Thai chicken salad is a delicious, healthy, and easy-to-make dish that's perfect for a quick lunch or dinner. With its vibrant flavors and textures, it's sure to be a hit with everyone at your table. So next time you're looking for a new and exciting salad recipe, give this one a try. You won't be disappointed!
