Steps:
- 1. Mix all ingredients together. Knead with hands until it resembles a pie dough.
- 2. Roll into small balls and dip into granulated sugar to keep the mints from sticking to the mold
- 3. Press into desired molds. Pop out immediately. If you don't have a mold roll into a rope and snip in desired lengths. Just sprinkle area with alittle sugar to keep from sticking.
- 4. Mints can be eaten immediately or stored in a covered container indefinately in the refrigerator.
- 5. Note: You can also use liquid food coloring but the paste produces a nice color
Tips:
- Make sure the cream cheese is softened to room temperature before you start. This will make it easier to mix and will help the mints to have a smooth texture.
- If you don't have a candy thermometer, you can test the sugar syrup by dropping a small amount into a cup of cold water. If the syrup forms a soft ball, it is ready.
- Be careful not to overcook the sugar syrup. If it gets too dark, it will taste burnt and the mints will be too hard.
- If you are using a food processor to make the mints, be sure to pulse it only until the mixture is well combined. Over-processing will make the mints tough.
- The mints can be stored in an airtight container at room temperature for up to 2 weeks.
Conclusion:
Cream cheese mints are a delicious and easy-to-make treat. They are perfect for parties, holidays, or just a sweet snack. With only a few simple ingredients, you can create a batch of mints that are sure to please everyone. So next time you are looking for a quick and easy dessert, give these cream cheese mints a try.
