Provided by Food Network Kitchen

Time 1h

Yield about 32 cookies

Number Of Ingredients 12

1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1/4 cup flaxseed, finely ground in a spice grinder, or pre-ground flaxseed
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
12 tablespoons (1 1/2 sticks) unsalted butter, softened
1 cup granulated sugar
3/4 cup packed dark brown sugar
2 large eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Whisk the flour, oats, flaxseed, baking soda, salt and cinnamon in a bowl.
  • Beat the butter, granulated sugar and brown sugar in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Beat in the eggs one at a time, beating well after each addition. Beat in the vanilla. Reduce the mixer speed to low; add the flour mixture and beat until just combined, scraping down the bowl as needed. Stir in the chocolate chips.
  • Drop heaping tablespoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake until golden brown, 10 to 12 minutes. Let the cookies cool 3 minutes on the baking sheets, then transfer to racks to cool completely.

FLAX SEED HONEY COOKIES

Flax Seed Honey Cookies image

I came up with this recipe when I wanted my 17 month old daughter to start taking flax. They are simple tasting, chewy and fairly easy to make. I flatten them down twice during baking with a spatula; once after 5 minutes of baking and then about a minute before they come out of the oven. DO NOT USE FLAX OIL in this recipe or any baking recipe for that matter as it breaks down into a substance that is not safe for ingestion. Only use flax seeds for baking or flax meal. Prep time doesn't include chill time.

1/2 cup maple syrup

  • Allow the dough to sit for 5-10 minutes before rolling into walnut-sized balls (or slightly larger) and placing them on a lightly oiled cookie sheet.
  • Press down on each ball gently with you index and middle finger - they'll flatten and you'll make a nice wavy impression in the cookie.
  • Slide in the oven and bake for 13 minutes. Allow to cool on a rack, or eat 'em warm with a tall glass of non-dairy milk.

Tips:

  • Use fresh flaxseed: Fresh flaxseed will yield the best flavor and nutritional benefits.
  • Grind the flaxseed finely: This will help it to blend into the cookies more easily and evenly.
  • Don't overmix the dough: Overmixing can make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: This will help the cookies to hold their shape better.
  • Bake the cookies at a moderate temperature: This will help to prevent them from burning.
  • Let the cookies cool completely before enjoying: This will allow the flavors to meld and the cookies to set.
