Provided by Annacia

Categories     Vegetable

Time 27m

Yield 4 serving(s)

Number Of Ingredients 6

8 ounces fresh green beans
2 slices bacon, cut up
1 medium onion, cut into think wedges (about 1 cup)
1/2 cup fresh sliced mushrooms
1 1/2 cups chopped tomatoes or 1 (14 1/2 ounce) can diced tomatoes, drained
1/4 teaspoon salt (*see note below)

Steps:

  • Leave green beans whole or cut into 1-inch pieces.
  • In a large saucepan cook the beans in a small amount of boiling salted water about 10 minutes or until crisp-tender; drain.
  • Meanwhile, in a 10-inch skillet cook bacon over medium heat until crisp, stirring occasionally.
  • Remove bacon, reserving drippings in skillet.
  • Drain bacon on paper towels; set aside.
  • Cook and stir onion and mushrooms in reserved drippings over medium heat until tender.
  • Add tomato and salt.
  • Cook, uncovered, 2 to 3 minutes or until most of the liquid is absorbed. Transfer beans to a serving platter or bowl.
  • Top with onion mixture.
  • Sprinkle bacon over the vegetables.
  • *Note: Omit salt if using canned tomatoes.

Tips:

  • Select fresh, tender green beans: Look for beans that are bright green in color and have a crisp texture. Avoid beans that are wilted, yellowed, or have brown spots.
  • Trim the green beans: Remove the ends of the green beans, where the stem was attached. You can also snap the beans in half or cut them into smaller pieces, if desired.
  • Blanch the green beans (optional): Blanching the green beans in boiling water for a few minutes helps to preserve their color and crispness. To blanch, bring a large pot of water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender. Immediately transfer the green beans to a bowl of ice water to stop the cooking process.
  • Cook the green beans: You can cook the green beans in a variety of ways, including boiling, steaming, sautéing, or roasting. The cooking time will vary depending on the method you choose.
  • Season the green beans: Add salt, pepper, and other seasonings to taste. You can also add garlic, onion, bacon, or other ingredients to enhance the flavor of the green beans.
  • Serve the green beans: Green beans can be served as a side dish or main course. They can also be added to salads, soups, and stews.

Farm-style green beans are a delicious and versatile dish that can be enjoyed in a variety of ways. With their simple ingredients and easy preparation, green beans are a great option for busy weeknight meals or special occasions.
