Homemade Vegetable Beef Soup image

My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

Tips:

  • Use a variety of vegetables. The more vegetables you use, the more flavorful your soup will be. Some good options include carrots, celery, onions, potatoes, tomatoes, and green beans.
  • Don't overcook the vegetables. You want them to be tender, but not mushy. Cook them until they are just tender when pierced with a fork.
  • Use a good quality beef broth. The beef broth is the base of the soup, so it's important to use a good one. Look for a broth that is low in sodium and has a rich flavor.
  • Season the soup to taste. Add salt and pepper to taste, and then adjust the other seasonings as desired. You can also add a bay leaf or two for extra flavor.
  • Serve the soup hot. Vegetable beef soup is best served hot with a side of bread or crackers.

Conclusion:

Farm country vegetable beef soup is a hearty and delicious soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a vegetable beef soup that the whole family will love.
