Time 35m

Yield 12 serving(s)

Number Of Ingredients 8

1 1/4 cups all-purpose flour
1 cup farina
1/4 cup sugar
2 1/2 teaspoons baking powder
1 teaspoon salt
1 cup milk
1/4 cup oil
1 egg

Steps:

  • Heat oven to 400 F.
  • Line with paper baking cups or grease the bottom only on a 12 muffin pan.
  • In large bowl, combine flour, farina, sugar, baking powder, and salt.
  • Mix well.
  • Add milk, oil, and egg.
  • Stir until dry ingredients are moistened.
  • Fill prepared muffin cups 2/3 full.
  • Bake at 400 F for 15 to 20 minutes or until muffins are light golden brown.

Tips:

  • Use cold butter. Cold butter will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the cookies, making them light and airy.
  • Gradually add the eggs, one at a time. Be sure to beat well after each addition.
  • Stir in the flour, baking soda, and salt. Mix until just combined. Do not overmix, as this will make the cookies tough.
  • Fold in the chocolate chips. Be careful not to overmix, as this will cause the chocolate chips to melt.
  • Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at 375 degrees Fahrenheit for 10-12 minutes, or until the edges are golden brown.
  • Let the cookies cool on a wire rack before serving.
