Steps:
- Combine the raisins, currants, apricots, figs, prunes, dates, walnuts, pecans, orange zest, lemon zest, candied ginger, pumpkin pie spice and cloves in a large bowl and toss to combine. Add 1 cup of the brandy, orange liqueur and molasses and stir to coat. Cover and set aside to macerate overnight. (Alternatively, cover the bowl and microwave 2 minutes, or until very hot. Leave covered and let sit until almost all the liquid has been absorbed into the fruit and nuts, about 2 hours.)
- Preheat the oven to 275 degrees F. Spray two 9-by-5-inch loaf pans with nonstick cooking spray and line each with 2 pieces of parchment, one lengthwise and one crosswise, leaving a 2-inch overhang on each side. Spray the parchment with cooking spray.
- Sprinkle 1/2 cup flour over the soaked fruit mixture and toss to coat. Whisk together the remaining 1 1/2 cups flour, baking soda, baking powder and salt in a large bowl.
- Cream the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment on medium-high until light and fluffy, about 1 minute. Add the eggs, one at a time, making sure each is fully incorporated before adding the next and scraping down the sides of the bowl as needed. Beat in the vanilla. Reduce the speed to medium-low and beat in the flour mixture until the batter is blended and smooth. Pour the batter over the fruit mixture and fold with a rubber spatula until all the fruit is coated in batter.
- Divide the mixture evenly between the two prepared pans, filling each about 3/4 full. Bake until the cakes begin to pull away from the sides of the pans, the tops spring back slightly when pressed and a cake tester comes out clean, about 1 1/2 hours. Transfer to a wire rack and brush with the remaining 2 tablespoons brandy. Let the cakes cool in the pans for about 15 minutes. Carefully remove each cake from its pan using the parchment overhang and place on the rack to cool completely.
- To store, wrap each loaf tightly in plastic and then foil. The wrapped fruitcakes can be stored in a cool, dry place for up to 3 months.

Steps:
- Preheat oven to 350˚F. Combine sugar with all wet ingredients.
- In a separate bowl, sift dry ingredients together. On medium speed, slowly beat the flour mixture into the wet mixture. Once the batter has been mixed thoroughly, reduce mixer speed to low and add your chopped nuts and raisins. Pour into a greased and floured 11″ x 9″ cake pan, and bake for approximately one hour.
- Check the doneness of the cake with a butter knife in the middle of the cake-if it comes out clean, it's ready. Let cool, then frost.
- In a small mug, dissolve the hot coffee in the hot water. Then, in a mixing bowl, whip the butter until it is soft before slowly adding the powdered sugar. Mix in the milk and vanilla, then add the coffee mix until it's soft and creamy. Pour the frosting on top of the cake and spread it out.
FANTASTIC BANANA FRUITCAKE
This cake is very moist, it is the ultimate in fruit cakes, I think it's the pureed banana, along with the pineapple, that makes this fruit cake so extra special. Make sure that the crushed pineapple is very well drained before adding to batter, also this fruit cake can be succesfully baked in mini loaf pans (just cut down baking time), these cakes freeze well, and also taste better when left until the following day.

Yield 2 bundt cakes, 24 serving(s)

Steps:
- Cream butter and sugar.
- Add eggs one at a time.
- Add extract, orange juice and soda water.
- Add cherries, pineapple, and pecans until all is added. I used to mix all by hand, but now I have a larger mixer that works well and I only mix the cherries, pineapple and pecans by hand.
- Drop batter by spoonsful into lightly greased and floured pans. Batter will be very heavy.
- Bake at 275 until firm to touch.
- This will make 2 large bundt pans, or a loaf pan and several small pans for gifts. The small pans take about 55-60 minutes and the large tube pans take about 65-80 minute The bundt pan will take longer. You can cut the recipe in half since the batter is so heavy and each half makes a whole bundt pan or one large and three smaller loaf pans.

Tips:
- Use ripe bananas: The riper the bananas, the sweeter and more flavorful your fruitcake will be. Choose bananas that are yellow with brown speckles.
- Cream the butter and sugar until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter and more tender cake.
- Add the eggs one at a time, beating well after each addition: This will help to prevent the batter from curdling.
- Stir in the mashed bananas and vanilla extract: These ingredients will add flavor and moisture to the cake.
- Gradually add the flour and baking soda to the batter, mixing until just combined: Overmixing will toughen the cake.
- Fold in the chopped walnuts and raisins: These add texture and flavor to the cake.
- Bake the cake in a preheated oven until a toothpick inserted into the center comes out clean: The baking time will vary depending on the size of your loaf pan, so check it frequently.
- Let the cake cool completely before glazing: This will help the glaze to set properly.
- To make the glaze, simply whisk together powdered sugar, milk, and vanilla extract: Pour the glaze over the cooled cake and let it set before serving.
Conclusion:
This banana fruitcake is a delicious and easy-to-make treat that is perfect for any occasion. It is moist and flavorful, with a sweet and tangy glaze. The walnuts and raisins add texture and flavor, and the glaze gives it a beautiful shine. This cake is sure to be a hit with everyone who tries it.
