FANNIE FARMER GRIDDLECAKES

Fannie Farmer Griddlecakes image

This recipe comes from an old old Fanny Farmer cookbook that I bought at a yard sale. An inscription inside was dated Dec. 25, 1945. These pancakes, or griddlecakes if you will, are the bomb and the only recipe I will use. Do give it a try...if you like a pancake that has lots of body then you won't be dissapointed.

3 tablespoons sugar
3/4 teaspoon salt
1 egg, slightly beaten
3/4 cup milk (or more)
3 tablespoons melted butter

Steps:

  • Mix together the dry ingredients. Add the beaten egg and melted butter and stir vigorously, adding more milk, if necesary, to make the batter just thin enough to pour. Serve with maple syrup and additional butter.

THE FANNY FARMER DARK FRUITCAKE

The Fanny Farmer Dark Fruitcake image

This famous fruitcake recipe by Fanny Farmer goes back years, I made it recently using the brandied fruit cake option as stated on the bottom of the recipe and I strongly recommend to use that method as the brandy will strongly intensify the flavor and preserve the cake, this fruit cake is wonderful and I plan on making it again.

OATMEAL PANCAKES

Oatmeal Pancakes image

Fannie Farmer's cookbook griddlecakes with 2 suggested changes. Oatmeal makes these pancakes hearty, while egg white makes them not so dense - perfectly balanced and great with real maple syrup. Recipe Note: it is best to have on hand extra flour & milk in case batter is too thin or thick. Add 1 tablespoon at a time to reach desired consistancy. note #2: updated recipe with corrections (a few typos originally)

Time 30m

Yield 16 silver dollar pancakes, 3 serving(s)

Number Of Ingredients 8

1/2 cup milk
1/2 cup oatmeal
3 tablespoons whole wheat flour
2 tablespoons butter, melted
2 tablespoons honey
1 egg, separated
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Warm the milk in the microwave or on the stove.
  • Pour milk over the oatmeal.
  • Let sit 10 minutes or until cool. (If not cool enough after 10 minutes, put in fridge for a few minutes.).
  • Once cooled, mix in flour, melted butter, honey, egg yolk, salt & baking powder. Don't overwork batter, just mix until there are no large chunks or clumps. Batter should be thick enough to slowly run off a lifted spoon. If it falls of spoon in clumps, add milk or water 1 tablespoon at a time. If it runs off quickly, add flour 1 tablespoon at a time.
  • In a separate bowl, beat egg whites until light and frothy.
  • Slowly fold the egg whites into the batter by hand, mixing only enough to get it mainly incorporated - the more you mix at this point, the denser your pancakes will be.
  • Cook on a greased hot griddle. Serve immediately.
  • Makes 16 silver dollar pancakes or 8 medium pancakes.

GRANDMOTHER'S POUND CAKE

Grandmother's Pound Cake image

The recipe is from Fannie Farmer Cookbook (1972 edition). It is a buttery dense cake. I have been making it for years. My family loves this cake. My daughter is especially fond of the ends. I have made it to serve plain or as an ice cream cake topped with a frozen fruit mixture. You must use an electric mixer to get the batter light and fluffy.

PICCALILLI

I loved this as a child, a great aunt made it. When I married and had my own garden I came across this recipe in a 1972 paperback Fanny Farmer Cookbook, that's all I could afford for cook books as a young couple. The recipe tastes exactly as I remembered as a child. And it is a great way to use up those green tomatoes left on the plants when the frost hits. Great on hamburgers and hot dogs. Or just as a change from pickles.

Categories     Vegetable

Time 1h15m

Yield 4 pints

Number Of Ingredients 13

5 green tomatoes
5 green peppers
2 red peppers
5 onions, peeled
1 small cabbage
1/4 cup salt
3 cups brown sugar
1 1/2 teaspoons celery seeds
1 tablespoon mustard seeds
1 tablespoon whole cloves
2 inches cinnamon sticks
1 tablespoon allspice berry
2 cups mild cider vinegar

Steps:

  • Cup up vegatables, I like to have mine in strips but you can also coarse chop them.
  • Sprinkle them with the 1/4 cup salt.
  • Cover and let stand overnight.
  • Next day.
  • Cover with cold water and drain.
  • Add the remaining Brine ingredients (I tie the spices in cheese cloth so that I can remove the whole spices from the vegatables).
  • Bring to the boiling point and cook slowly 15 minutes.
  • Pack in pint jars.
  • And process in boiling water bath to seal.

Tips:

  • Use buttermilk: Buttermilk adds a tangy flavor and helps to make the griddlecakes light and fluffy.
  • Let the batter rest: Letting the batter rest for at least 30 minutes before cooking allows the flour to absorb the liquid and develop a more complex flavor.
  • Cook the griddlecakes over medium heat: Cooking the griddlecakes over medium heat prevents them from burning on the outside while still cooking through in the middle.
  • Flip the griddlecakes only once: Flipping the griddlecakes too often can make them tough and dry. Flip them only once, when bubbles start to form around the edges.
  • Serve the griddlecakes warm: Griddlecakes are best served warm, with butter, syrup, or your favorite toppings.

Conclusion:

Fannie Farmer's Griddlecakes are a delicious and easy-to-make breakfast treat. By following these tips, you can make perfect griddlecakes every time. Whether you like them plain or topped with your favorite ingredients, these griddlecakes are sure to please everyone at your table.
