Spanish style Macaroni Cheese with Chorizo and Manchego image

Hearty comfort food at its best, this Spanish style Macaroni Cheese with Chorizo and Manchego takes the humble mac and cheese to the next level!

300 g macaroni
1 tablespoon olive oil
150 g chorizo (diced)
25 g butter
1 onion (diced)
1 clove garlic (crushed)
2 tablespoons plain flour
500 ml milk
Black pepper (to taste)
200 g manchego cheese ((or another hard cheese such as cheddar or parmesan))
50 g panko breadcrumbs
Green salad to serve

Steps:

  • Pre heat your oven to 220C / 200C fan / gas mark 7 / 425F.
  • Cook the macaroni in plenty of boiling salted water for about 3 minutes less than you would normally do it. This is important, or your macaroni will end up soggy and stodgy. Drain reserving a little of the cooking water.
  • Meanwhile, heat a wide, oven proof saucepan or cast iron casserole dish over a medium heat and add the olive oil and chorizo. Cook for 3 minutes, stirring frequently. Tip the chorizo onto a plate.
  • Turn down the heat and add the butter to the pan you just used for the chorizo. When the butter is melted add the onions and fry with the lid on for about 3-4 minutes, until the onions are nicely softened. Add the garlic and fry for 1 more minute. Stir occasionally.
  • Sprinkle the plain flour over the onions/garlic and stir well, then add the milk very slowly, stirring constantly until thickened. When the sauce is roughly the thickness of double (heavy) cream, add in a few twists of black pepper, the chorizo and 150g/5oz of the cheddar cheese. Stir until the cheese is melted and then turn the heat off.
  • In a small bowl, place the panko breadcrumbs and the remaining 50g/2oz of the cheese. Mix together to make the topping.
  • Tip the macaroni into the cheese sauce, together with about a tablespoon of the cooking water, and stir to combine. Scatter the panko topping evenly over the top and place in your preheated oven for 10-15 minutes or until golden and bubbling.

50 g Butter
175 g Chorizo (sliced)
2 Garlic Cloves (chopped)
50 g Plain Flour
600 ml Milk
200 g Extra Mature Cheddar (grated)
100 g Block Mozzarella (grated)
1 tsp Smoked Paprika
1/4 tsp Cayenne Pepper
1 tsp Dijon Mustard
250 g Macaroni
25 g Panko Breadcrumbs
2 tbsp Parmesan (grated)

Steps:

  • Preheat the oven to 180°C (160°Fan / Gas Mark 4/ 350F).
  • Bring a large pan of salted water to the boil. Cook the macaroni according to packet instructions. Drain and set aside.
  • Meanwhile in another large pan, melt the butter over a medium heat.
  • Add the chorizo and garlic and fry for a minute to release the chorizo oils.
  • Stir in the flour and cook for 2 minutes, stirring all the time.
  • Gradually add the milk, turn up the heat and whisk until the sauce thickens. It should coat the back of a wooden spoon. This usually takes a couple of minutes.
  • Take the sauce off the heat and add the grated cheddar, mozzarella, smoked paprika, cayenne pepper and Dijon mustard. Stir until the cheese melts into the sauce.
  • Add the cooked pasta to the cheese sauce, mix together, and spoon into an ovenproof dish.
  • Sprinkle over the panko breadcrumbs and parmesan, and bake in the oven for 20 minutes until golden and bubbling.

1 cup milk
1 teaspoon cornstarch
4 ounces shredded cheddar cheese (about 1 cup)

  • Cook the macaroni pasta: Put 2 quarts of water, salted with 1 Tbsp salt, into a large pot and heat to a boil. Once the water is at a full boil, add the macaroni to the pot. Return to a boil, and cook, uncovered, for about 2 minutes less than the macaroni package specifies, so that it is al dente, cooked, but still firm to the bite.
  • Drain macaroni, preheat oven: When the macaroni is cooked, but still a bit firm, drain it and set aside. Preheat oven to 375°.

1 lb cavatappi pasta (hollow corkscrew) or 1 lb other short- cut pasta
extra virgin olive oil, for drizzling
1/2 lb raw chorizo sausage, casting dicarded, chopped
3 tablespoons butter
2 shallots, chopped
3 -4 garlic cloves, finely chopped
3 tablespoons flour
1/3 cup dry sherry
1 cup chicken broth
1 cup whole milk or 1 cup half-and-half
2 cups shredded manchego cheese
2 cups frozen peas, thawed1/4 cup chopped jarred pimiento peppers
1/2 cup coarsley chopped flat leaf parsley

Steps:

  • Bring a large pot of water to boil, salt it. Add the pasta and cook until aldente. Drain.
  • While the pasta is working, in a large skillet, heat a drizzle of olive oil over medium heat. Add the chorizo and cook until crisp, 2 to 3 minutes. Transfer to a paper towel lined plate.
  • In a medium saucepan, over medium heat add the shallots and garlic and cook until tender about 5 minutes. Whisk in the flour and whisk in the sherry. Stir in the chicken broth andmilk and cook until thickened; season with pepper. Stir in the cheese. Fold in the peas and pimientos.

6 ounces chorizo or spicy Italian sausage, casings removed
1/4 cup chopped onion
1 large garlic clove, minced
2 cups grated Oaxaca or mozzarella cheese
6 flour tortillas, warmed

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onion and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.

1 tbsp olive oil
200g chorizo ring, cut into small cubes
3 large eggs
100g crème fraîche , plus extra to serve
150g double cream
150g manchego cheese , grated
250g plain flour , plus extra for dusting
1½ tbsp smoked paprika
½ tsp cayenne pepper
100g cold unsalted butter , cubed

Steps:

  • Heat the oil in a medium frying pan over a high heat, and fry the chorizo for 4-5 mins until crisp. Transfer to a plate lined with kitchen paper using a slotted spoon, and set aside to cool. Set the pan with the fat aside, and leave to cool. For the pastry, put the flour, 1/2 tsp salt, the paprika, cayenne pepper, cooled chorizo fat and the butter in the bowl of a large food processor and blitz until the mixture looks like coarse breadcrumbs. Gradually pulse in 4 tbsp cold water until it comes together into a dough. Turn out onto a lightly floured surface, and knead gently until smooth. Wrap the dough and chill for at least 10 mins. Will keep chilled for up to three days.
  • Heat the oven to 200C/180C fan/gas 6. Roll the chilled pastry out on a floured work surface to the thickness of a 50p coin then lift it into a 23cm loose-bottomed tart tin, leaving an overhang. Prick the base all over with a fork, line with baking parchment, then fill with baking beans. Transfer to a baking sheet and bake for 15 mins. Remove the parchment and beans, then bake for 15-20 mins more until golden and crisp. Trim away the pastry that is overhanging using a serrated knife.
  • Meanwhile, whisk the eggs, crème fraîche and cream together, season, then stir in the cheese and cooled chorizo. Pour into the pastry case and bake for 25-30 mins until the filling is just set. Leave to cool in the tin, then remove from the tin and slice. Will keep in the fridge for up to three days.

Steps:

  • Preheat the oven to 350°F (180°C).
