One of my favorite recipes from my mom. Everyone loves it, and its soooo quick and easy, and made from ingredients that we usually have on hand. Great to impress last-minute company.

Number Of Ingredients 7

6 boneless skinless chicken breasts
6 slices swiss cheese
1/4 lb sliced mushrooms
1 can condensed cream of chicken with herbs soup (I try to use the low fat)
1/2 cup dry white wine (or chicken broth)
2 cups herb-seasoned stuffing cubes (not Stove-Top)
2 tablespoons margarine

Steps:

  • Preheat oven to 350.
  • Place the chicken in a 9x13 pan sprayed with"Pam".
  • Top each piece of chicken with a slice of cheese.
  • Arrange the sliced mushrooms over the cheese.
  • Mix the soup and the wine together, and pour over the top.
  • Sprinkle the stuffing over the top.
  • Melt the margarine and drizzle over the top.
  • Bake for approx 40 minutes or until chickenis baked through.

6 bonless, skinned chicken breast
6 slice swiss cheese
1/4 lb sliced mushrooms (optional)
1 can(s) cream of chicken soup
1/2 c white wine
2 c dry herb stuffing
1 stick butter, melted

Steps:

  • 1. Place chicken in lightly greased 9x13 glass baking dish. Top each piece with slice of Swiss cheese. Place some mushrooms over each piece of chicken.
  • 2. Stir wine (or water) with soup and mix well. Spoon over chicken.
  • 3. Sprinkle 2 cups of dry herb suffing over top. Pour melted butter over stuffing. (drizzle to get some over most parts of dressing.)
  • 4. Bake at 375 about 55 minutes. Until chicken is done. Lightly place foil over dish if stuffing is browning too quickly.

Tips:

  • For a crispy skin, pat the chicken dry with paper towels before cooking.
  • Season the chicken generously with salt and pepper. You can also add other spices or herbs, such as garlic powder, onion powder, paprika, or thyme.
