Steps:
- Preheat oven to 350℉.
- In a saute pan over medium heat, melt butter. Add diced onion and cook, stirring occasionally, for about 5 minutes, or until soft and translucent. Add the garlic and a pinch of salt and pepper and cook for 1 minute more. Remove to a bowl and set aside to cool.
- In a large bowl, add the meat, salt & pepper, eggs, Worcestershire sauce, chili sauce, sour cream, bread crumbs, hot sauce, dried sage, bacon, and the cooked onion and garlic.
- Use your hands to thoroughly mix everything together. Alternatively, use a stand mixer with a paddle attachment on medium speed for about 2-3 minutes.
- Scoop the meat mixture into a 9x5-inch loaf pan. Spread the mixture evenly, using your hands to press it evenly into the bottom of the pan.
- Cover with foil and bake for 45 minutes.
- After 45 minutes, remove from the oven and remove the foil. Carefully drain off most of the fat from the pan into a heatproof bowl. Evenly top the meatloaf with a generous amount of chili sauce. Return the pan to the oven and bake for another 15 minutes, or until a thermometer inserted into the center reads 160℉.
- Let the cooked meatloaf rest uncovered for at least 10-15 minutes before serving.

Steps:
- Preheat oven to 325.
- In a very large bowl put hamburger, crackers crumbled, salt, essence, boullion powder, and black pepper - set aside.
- Cut onion into larger pieces and put it in the food processor with the garlic -- pulse until pieces are small. Dump onion mixture into the bowl with the meat.
- Beat the three eggs (in the food processor if you don't want to dirty a bowl) and add them to the meat bowl.
- Add the tomato sauce to the meat bowl and use your hands to mix all very well (I like to wear rubber gloves to save on clean-up time).
- Divide meat mixture in half. Form into two loaves on the botton of your broiler pan or a roasting pan. Leave room between loaves for even baking.
- In smaller bowl mix together with a fork; ketchup, brown sugar, water, mustard and cider vinegar. This is your topping -- Brush tops and sides of loaves with this before baking and again while baking.
- Bake for 1 hour and 15 minutes to 1 hour and 25 minutes.
- When I remove the pan from the oven I like to pour off the excess oil in the bottom of the pan. Let cool for about 5 minutes before serving. Slice thick and pieces should hold together well.

Tips:
- Choose the right ground beef. For a moist and flavorful meatloaf, use a ground beef mixture that contains at least 20% fat. You can also use a combination of ground beef and ground pork or ground veal.
- Don't overwork the meatloaf mixture. Overworking the meatloaf mixture will make it tough. Mix the ingredients just until they are combined.
- Use a loaf pan that is the right size. A 9x5-inch loaf pan is the perfect size for a family-style meatloaf. If you use a larger loaf pan, the meatloaf will be too thin and will not cook evenly.
- Bake the meatloaf at a high temperature for a short amount of time. This will help to create a crispy crust on the outside of the meatloaf while keeping the inside moist.
- Let the meatloaf rest before slicing it. This will help to keep the juices from running out of the meatloaf.
Conclusion:
Family-style meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. By following these tips, you can make a perfect meatloaf every time. Serve it with your favorite sides, such as mashed potatoes, green beans, or corn on the cob, and enjoy!
