Time 1h

Yield 8 serving(s)

Number Of Ingredients 6

2 cups cooked chicken
1 can condensed golden mushroom soup
8 ounces sour cream (substitute plain yogurt for low fat version)
12 ounces mozzarella cheese (skim mozzarella for low fat version)
2 packages Ritz crackers
nonstick cooking spray

Steps:

  • Mix the first four ingredients together.
  • You can add a cooked vegetable to this to make a complete meal in one dish.
  • Crush the Ritz crackers.
  • Spray a casserole or baking dish with non-stick cooking spray.
  • Add 1/3 of Ritz crackers.
  • Put in half of chicken mixture.
  • Add 1/3 of Ritz crackers on top of chicken.
  • Put in the other half of chicken mixture and top with remaining Ritz crackers.
  • Bake at 350 for 45 minutes.
  • Makes 8 servings.

Tips:

  • Use fresh ingredients: The fresher the ingredients, the better the casserole will taste. This is especially important for vegetables, which can lose their flavor and nutrients if they are not fresh.
  • Don't overcook the vegetables: Vegetables should be cooked until they are tender-crisp, but not mushy. This will help them retain their flavor and nutrients.
  • Use a variety of vegetables: A variety of vegetables will give the casserole more flavor and texture. Some good options include broccoli, cauliflower, carrots, celery, onions, and potatoes.
  • Season the casserole well: Season the casserole with salt, pepper, and other herbs and spices to taste. This will help bring out the flavors of the vegetables and other ingredients.
  • Use a good quality cheese: The cheese is one of the most important ingredients in a casserole. Use a good quality cheese that melts well and has a lot of flavor.
  • Don't overcook the casserole: The casserole should be cooked until it is heated through and the cheese is melted, but it should not be overcooked. Overcooking can make the casserole dry and tough.

Conclusion:

Family reunion casseroles are a great way to feed a crowd and celebrate special occasions. They are easy to make and can be tailored to fit any dietary restrictions. With a little planning, you can create a delicious and memorable casserole that everyone will love.
