1 cup chopped sweet onion
1/2 cup crushed saltines (about 15 crackers)
1 large egg
1 jalapeno pepper, seeded and minced
1 envelope ranch salad dressing mix
1 tablespoon Worcestershire sauce
1 garlic clove, minced
1 teaspoon pepper
2 pounds ground beef
1-1/2 cups shredded cheddar cheese
1 jar (4-1/2 ounces) sliced mushrooms, drained
3 tablespoons cream cheese, softened
6 kaiser rolls, split

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into twelve thin patties., Combine the cheddar cheese, mushrooms and cream cheese; spoon onto centers of six patties. Top with remaining patties; press edges firmly to seal., Grill burgers, covered, over medium heat or broil 4 in. from heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Serve on rolls.

Great chili for the whole family including kids. Not too spicy and has the right amount of beans. Also "hides" a lot of veggies. Add more chili powder to make it more spicy. This is a big recipe, so great to make ahead and freeze for future meals

2 1/2 lbs extra lean ground beef
2 tablespoons vegetable oil
1 large onion, diced
4 garlic cloves, minced
4 celery ribs, diced
2 green peppers, diced
1 zucchini, diced
2 tablespoons chili powder
1 tablespoon cumin
2 teaspoons salt
2 teaspoons pepper
2 teaspoons onion powder
1 (28 ounce) can kidney beans, drained
2 (28 ounce) cans diced tomatoes
1 (5 1/2 ounce) can tomato paste
1/4 cup brown sugar
1/4 cup apple cider vinegar

Steps:

  • 1. Place a large pot over med-high heat.
  • 2. Cook meat until browned, drain in a colander and put aside.
  • 3. In same pot, sautee the onion in the oil for 3-4 minute.
  • 4. Add garlic, celery, green peppers and zucchini and sautee for another 5 to 8 minutes.
  • 5. Mix the chili powder, cumin, salt, pepper and onion powder together.
  • 6. Add the spice mix to the veggies and stir to combine well.
  • 7. Add the meat back into the pot and stir.
  • 8. Add the remaining ingredients (kidney beans, diced tomatoes, tomato paste, brown sugar and apple cider vinegar). Still to combine.
  • 9. Bring to a boil, then reduce heat and simmer for about 1 hour.

I wanted a copycat version of Olive Garden's chicken scampi but wanted it to be quick and easy. So I took a several different chik scampi recipes and made one of my own. Even my picky 8y/o liked this, even though he picked out the bell peppers. :) It may look like a lot of ingredients but sooooo easy!

1 lb angel hair pasta, cooked according to package (start first, so will be finished before chicken)
2 tablespoons butter
1 tablespoon olive oil
1/2 green bell pepper, thinly sliced
1 medium red onion, thinly sliced
1 -2 lb boneless skinless chicken breast, thinly sliced
2 tablespoons garlic, minced or 2 tablespoons garlic powder
2 teaspoons italian seasoning
1/4 teaspoon crushed red pepper flakes
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can water
2 teaspoons lemon juice
1 roma tomato, quartered, seeds removed then diced small

Steps:

  • 1. heat butter and oil in large skillet or pot over med. high heat until melted.
  • 2. add bell pepper, onion, chicken, garlic, italian seasoning and red peppers.
  • and cook until done and lightly browned
  • 3. add cooked pasta, soup, can of water and lemon juice then stir.
  • 4. add tomato and serve.
  • 5. enjoy! with a nice green salad and/or garlic bread.

2 bag(s) frozen brussels sprouts
6 slice lemon
4 clove sliced garlic
1/4 c olive oil, extra virgin
1 Tbsp fresh thyme or 1 tsp dried
1/2 tsp sea salt
1/4 tsp ground pepper
1/3 c finely shredded parmesan cheese
1/4 c toasted pine nuts or walnuts

Steps:

  • 1. Place Brussels Sprouts in an uncovered saucepan and cover with water.
  • 2. On stove top, bring water and sprouts to a boil, and cook for three minutes until just fork tender and still bright green.
  • 3. Drain Brussel Sprouts.
  • 4. In sauce pan, heat olive oil. Sauté garlic, thyme, nuts, salt, and pepper.
  • 5. Add cooked Brussel Sprouts and heat through.
  • 6. Squeeze lemon over Brussel Sprouts and top with Parmesan cheese.
