Homemade spaghetti sauce is my favorite thing to make with fresh garden tomatoes. This rich, hearty sauce is an instant favorite with anyone who tries it!

Provided by Erica Walker

Categories     Dinner     Main Course

Time 1h15m

Number Of Ingredients 11

12-14 tomatoes ((fresh, garden tomatoes work best- appx. 8-10 lbs))
2 tablespoons olive oil
1 large onion (chopped)
8 ounces mushrooms (fresh, chopped)
2 teaspoons soy sauce ((see notes above))
6 cloves garlic
10-12 basil leaves (chopped)
1 tablespoon oregano (finely chopped)
2 tablespoons brown sugar
1 tablespoon Kosher salt ((or to taste))
1 teaspoon pepper ((or to taste))

Steps:

  • Bring a large pot of water to a boil. Place tomatoes a few at a time in the water and remove after 10-15 seconds.
  • Immediately place tomatoes in an ice-water bath and remove skins and stems. Cut tomatoes into fourths and place in a food processor or blender.
  • Process tomatoes a few times, you want them to be the consistency of crushed tomatoes (don't over process). Set aside.
  • Heat oil in a large skillet. Add onions and saute until they become soft and transparent.
  • Add mushrooms and cook for about 2-3 minutes. Add soy sauce and garlic and continue to cook until mushrooms become soft.
  • Add tomatoes, basil, oregano, brown sugar, salt and pepper.
  • Bring to a simmer, stirring occasionally for at least one hour. The longer the better! Ideally 2+ hours.
  • Serve over cooked pasta.

My mother has been making this sauce since before I can remember. Picking the tomatoes off the vine in our garden. The smell of it cooking makes our house the most welcoming on the block, and the bright red color of the sauce from using vine ripened tomatoes makes it a real treat.

ZAPPA FAMILY SPAGHETTI SAUCE

Zappa Family Spaghetti Sauce image

I have spent a lifetime trying to duplicate the red sauce and meatball recipe my mother, Anne Marie Zappa, cooked every week when I was growing up. I'll never do it, but this is close. This is a forgiving recipe. Maybe you want to add a couple of chicken thighs, or mix in a few browned hot sausages. Just keep a good ration of pork to beef.

Time 3h

Yield 6 to 8 servings

Number Of Ingredients 20

Salt and pepper
1 pound pork spareribs, neck bones or pork chops
1 pound beef chuck roast, blade steak or brisket
3 tablespoons olive oil
3/4 cup chopped onions
2 cloves garlic, minced
1 6-ounce can tomato paste
1 teaspoon dried oregano
1 tablespoon dried basil
1 teaspoon dried red pepper flakes
1 1/2 teaspoons kosher salt
1 bay leaf
1 28-ounce can crushed tomatoes, preferably Italian
1 28-ounce can tomato sauce
1/2 teaspoon sugar
2 tablespoons fresh parsley, roughly chopped
4 small or 2 large pickled peperoncini
Cooked meatballs
1 pound dried spaghetti for serving
Grated Parmesan for serving

Steps:

  • Sprinkle salt and pepper all over pork and beef. Place large pot over medium-high heat; when hot, add olive oil and brown meat. (Or cook meat in same pot used for meatballs, browning in the leftover fat.) Remove meat to a platter. Turning heat under pot to medium, add onions, and cook 3 minutes, stirring. Add garlic, and cook 2 minutes longer. Add tomato paste, and stir: cook until it absorbs fat in pan. Add oregano, basil, red pepper flakes, kosher salt and bay leaf, stirring to combine.
  • Add cans of tomatoes and tomato sauce, then 4 1/2 cups water. Stir in sugar, parsley and peperoncini. Return meats to pot with their juices. Bring sauce to a gentle boil. Turn heat down to a simmer, partly cover and leave sauce to simmer 21/2 hours or more, stirring regularly.
  • About 20 minutes before serving, add meatballs to pot. Boil spaghetti according to package directions. Drain, return spaghetti to pan and add 3 cups sauce. Toss pasta in pan for a minute to coat with sauce, and place on a large platter. Pour 2 more cups sauce over pasta. Place meat and meatballs on pasta, slicing large pieces. Serve with bowls of remaining sauce and Parmesan.

Tips:

  • Choose the right tomatoes: Use ripe, flavorful tomatoes for the best sauce. Look for tomatoes that are deep red in color and have no blemishes.
  • Use fresh herbs: Fresh herbs add a lot of flavor to spaghetti sauce. If you can, use fresh basil, oregano, and thyme.
  • Don't overcrowd the pot: When cooking the sauce, don't overcrowd the pot. This will prevent the sauce from cooking evenly.
  • Simmer the sauce for at least 30 minutes: Simmering the sauce for at least 30 minutes allows the flavors to develop and deepen.
  • Taste the sauce as you cook it: Taste the sauce as you cook it and adjust the seasonings as needed.

Conclusion:

Spaghetti sauce is a versatile dish that can be used in a variety of ways. It can be served over pasta, used as a pizza sauce, or even used as a dipping sauce. No matter how you choose to serve it, this spaghetti sauce is sure to be a hit!
