1/4 c butter
1 - 16 oz loaf, french bread - cubed
3 3/4 - 4 c milk
2 c sugar
1 tsp cinnamon
4 eggs
1 c each - chopped pecans & raisins
2 Tbsp good vanilla extract
SAUCE
2 Tbsp butter
2 Tbsp rum
1/2 c sugar
3 oz milk
1/4 c corn starch - minus 2 teaspoons

Steps:

  • 1. Preheat oven to 350 degree F. Melt butter in a 9 x 13 baking dish ( I did mine in a 3 quart casserole, which took longer to bake. ) Once butter is melted remove from oven. In a large bowl, place bread cubes. Pour milk over the bread and leave set for at least 5 minutes, making sure all bread is saturated. I then toss in the raisins and pecans.
  • 2. In another bowl, mix the eggs, cinnamon, sugar and vanilla. Blend well and then mix with the milk soaked bread. Carefully combine.
  • 3. Pour bread mixture into dish with melted butter. Spread evenly.
  • 4. Bake for 40 - 45 minutes or until puffy and firm.
  • 5. Sauce: Whisk together the milk and corn starch in a small bowl and set aside. In a small saucepan, over medium heat, melt butter and stir in sugar and rum. Bring to a boil. Slowly stir in the milk mixture and continue cooking until thickening. It will thicken further as it cools.
  • 6. Serve sauce over warm bread pudding. Delicious!

1/2 c butter (1 stick) melted
12 c white bread, toasted and cubed (about 3-1 lb loaves)
1 c finely chopped onion
3 c finely chopped celery
fresh parsley or dried parsley, to taste
1 Tbsp salt
1 Tbsp poultry seasoning
1 tsp paprika
1/2 tsp black pepper
2 eggs, slightly beaten
NOTE: DO NOT STUFF THE TURKEY OVERNIGHT. IF MAKING STUFFING THE DAY BEFORE, REFRIGERATE OVERNIGHT, THEN STUFF THE TURKEY IN THE MORNING. ALSO; DON'T ADD THE EGGS TO THE STUFFING UNTIL RIGHT BEFORE BAKING IT, OR STUFFING THE TURKEY.

Steps:

  • 1. Toast your bread, then slice it into bite sized cubes and put in a large mixing bowl.
  • 2. Add the seasonings to cubed bread and toss lightly.
  • 3. Add butter to a large saute pan, add onions and celery, and cook until vegetables are tender, about 5 minutes. Add to the bread mixture, and mix well.
  • 4. If baking right away, add egg to bread mixture, then put all of the stuffing into a 3 qt. baking dish, and cook for 1 hour, covered, until hot. (If you like crispy stuffing, remove cover for the last 15 minutes of cooking. NOTE: If baking the stuffing set your oven at 350 degrees.

3 cups bread flour

1 tsp salt
1 c low-fat buttermilk
1/2 c natural applesauce
2 Tbsp butter, melted

4 cups warm water (not hot)
2/3 cup nonfat dry milk powder (instant powdered milk)
1/3 cup sugar or 1/4 cup honey
4 teaspoons yeast
1 tablespoon salt
1/3 cup oil
12 cups white flour or 12 cups whole wheat flour

Steps:

  • Using a very large bowl, mix the water, dry milk powder and sugar. Add the yeast, sort of sprinkled on top. Allow the mixture to sit until the yeast dissolves some, this should only take a couple of minutes. Add the salt, margarine or oil, and flour. Mix with a wooden spoon until it gets too stiff and then dig in with your hands. When the dough is in a nice cohesive ball, turn it out onto a floured kitchen table or counter.
  • Knead the dough for 10 minutes, adding more flour as necessary as you go along.
  • Coat the dough with oil, about 2 tablespoons of it, and put it into the bowl. Cover it with a towel or plastic wrap and let it set in a warm place to rise for about an hour or so. It should double in bulk. It may take up to two hours on cool days, or in the air conditioning, so be patient.
  • Punch down the dough by literally pressing your fist into the center of it. Divide the dough into 4 equal lumps. Coax them into loaf shapes and place them into large (9- by 5-inch) well oiled loaf pans. Cover the dough with a clothor more plastic wrap and let it rise again. It should take less time for the second rising. en the dough is risen up enough, bake the loaves at 350F for about 40 inutes.
  • You can tell the bread is done by thumping the bottom with your finger. If it doesn't make a dull, hollow sound, put it back into the pan a bake a short while longer.
