Steps:
- Preheat the oven to 450°F (230°C).
- In a large bowl, combine the water, salt, and 1½ teaspoons oil. Slowly add the masarepa and mix with your hands until a smooth, homogeneous dough forms. Let the dough rest for 10 minutes. Don't worry if the dough is too soft at first; the flour will hydrate as it rests to become smooth and malleable.
- Divide the dough into 4 balls, then shape into patties. Press herbs and flowers onto both sides of each patty.
- Heat a large pan over medium heat. Add a small drizzle of oil and use a paper towel to distribute in an even layer over the surface of the pan. Too much oil will prevent the arepas from caramelizing. Add the patties to the pan and sear for 4 minutes on each side, until starting to puff up and turn golden brown in spots.
- Set the arepas on a baking sheet, then transfer to the oven to finish cooking for about 10 minutes. You'll know they are done when they make a hollow sound when tapped.
- Cut the arepas open, fill with your desired fillings, serve immediately.
- Enjoy!

ENCANTO-INSPIRED AREPAS CON QUESO WITH AVOCADO MASH RECIPE BY TASTY
We made the popular arepas con queso from Disney's Encanto. One bite and we felt like we were transported to the magical home of Maribel. Make sure to use pre-cooked cornmeal, as regular cornmeal will not work in this recipe.

Steps:
- Make the arepas: Add the cornmeal to a medium bowl. Pour in the water, then add the salt and stir with a rubber spatula to combine. The dough will look quite wet at first, but will absorb the water as you stir.
- Turn the dough out onto a clean surface and roll into an 8-inch long, 2-inch (5 cm)-wide log. Cut into 4 equal pieces.
- Flatten one piece of dough in the palm of your hand into a 4-inch-wide disc. Place 1 tablespoon of queso blanco in the center, then fold the dough around the cheese to encase. Flatten the dough again into a 4½-inch-wide disc (if some cheese peeks out, pinch the dough closed around it. Repeat with the remaining dough and cheese.
- Heat a large nonstick skillet over high heat. Grease the pan with nonstick spray, then add the arepas to the pan and cook, without disturbing, until a crispy, golden brown crust forms, 3½-4 minutes. Flip and cook until golden brown on the other side, 3-4 minutes more (some cheese may ooze out a bit; it will sear and add a delicious texture to the arepa).
- Meanwhile, make the avocado cilantro mash: Add the avocado, lime juice, red pepper flakes, and salt to a medium bowl and mash with a fork to combine.
- Spread the butter over the arepas, then serve with the avocado mash and a sprinkle of cilantro.
- Enjoy!
Tips:
- For the best results, use fresh, high-quality ingredients.
- Make sure the arepa dough is well-hydrated and kneaded until smooth.
- Cook the arepas on a hot griddle or skillet until they are golden brown and crispy on the outside and cooked through on the inside.
- Serve the arepas hot with your favorite fillings, such as shredded chicken, beef, or pork, or with cheese, beans, or vegetables.
- Arepas can also be used to make sandwiches or wraps.
Conclusion:
Arepas are a delicious and versatile food that can be enjoyed for breakfast, lunch, or dinner. They are easy to make and can be filled with a variety of ingredients, making them a great option for a quick and satisfying meal. So next time you're looking for something new to try, give arepas a try!
