SLOW COOKED MADRAS CHICKEN CURRY (CROCK POT)
I do love my crock pot as it continually provides me with tasty and effortless meals. This began as a recipe found on about.com, but the changes are rather substantial so I feel comfortable calling it my own. There are as many ways to prepare curry as there are chefs who enjoy the spice blend which makes me a little apprehensive about posting this recipe. Your results will vary according to the curry powder and chutney selected so please adjust to your own tastes.

Steps:
- Lightly spray the interior of your crock pot with a light coating of cooking spray for easier clean up later.
- Cover the bottom of pot with the onions, garlic and jalapeños. Top with the chicken breasts. (Please make sure the onions are finely chopped as the desired result is to have them melt into the sauce.).
- Combine the curry powder, chutney, tomato paste and ginger together and pour over the chicken.
- Place the apples on top.
- Cook for 4-5 hours on high until the chicken is cooked and tender but not falling apart. Mix the sauce together so that all elements are blended. If you want a thicker sauce, remove the chicken from the crock pot and stir in a teaspoon or two of cornstarch and cook until the sauce is glossy.
FALL IN MY CROCK POT AND CURRY ME OVER (WW CORE)
Although I did not submit a recipe for the Category Craze-E contest, the wonderful list of ingredients begged me to cook along with other members. This hearty soup includes an assortment of fall/winter vegetables and small turkey meatballs. This would also work well as a vegetarian meal using two 14 oz cans of chickpeas or one 19 ounce can of the same instead, along with vegetable broth. Curry powders vary immensely in their flavor intensity and spiciness so the measurements here serve as a guide. Use your own preferences to make the decision.

Steps:
- Mix together the onions, garlic, ginger, celery, parsnips, carrots, butternut and potatoes and place in the bottom of the crock pot. Pour in the canned tomatoes and tomato sauce.
- Place the broth, curry powder, gaaram masala and cayenne (if using) in a small sauce pan and bring to a light boil. Set aside.
- Mix together all of the ingredients for the meatballs together. Form into small 1 inch meatballs. I used a cookie dough scoop to get a uniform size. Place the meatballs in the crock pot in a single layer. If possible -- my cooker is very large so it was easy -- try and have the meatballs not touch.
- Pour the warm broth over the meatballs. Cover and cook at high for 4-6 hours. (Yes, you can peek after two hours but let the heat cook the meat first.).
- Give the soup a good stir before serving.
- Enjoy!
- Contest ingredients: celery, carrots, parsnips, butternut, ground turkey, curry powder & oats.

Tips:
- Mise en Place: Before you start cooking, make sure you have all the ingredients and equipment you need. This will help you stay organized and prevent any scrambling.
- Choose the Right Crock Pot: Select a crock pot that is large enough to accommodate all of your ingredients comfortably. A 6-quart or larger crock pot is a good choice for most recipes.
- Brown Your Meat (Optional): Browning your meat before adding it to the crock pot can help to develop flavor and add depth to your dish. However, this step is optional and can be skipped if you are short on time.
- Layer Your Ingredients: When adding ingredients to the crock pot, layer them in a way that ensures that they will cook evenly. Place denser ingredients like root vegetables on the bottom and lighter ingredients like leafy greens on top.
- Use Low and Slow Cooking: Crock pot cooking is all about low and slow cooking. This allows the flavors to develop and meld together, resulting in a delicious and tender dish. Most recipes will cook on low for 6-8 hours or on high for 3-4 hours.
- Thicken Your Sauce (Optional): If you want a thicker sauce, you can add a cornstarch slurry or a roux to the crock pot towards the end of the cooking time. Be sure to stir until the sauce has thickened to your desired consistency.
Conclusion:
Crock pot cooking is a great way to create delicious and hearty meals with minimal effort. By following these tips, you can ensure that your crock pot recipes turn out perfect every time. So next time you're looking for an easy and convenient way to feed your family or friends, reach for your crock pot and let it do the work for you!
