Falafel and veggie burgers are delicious and versatile dishes that can be enjoyed by people of all dietary preferences. Falafel, made from chickpeas or fava beans, is a Middle Eastern delicacy with a crispy exterior and soft, flavorful interior. Veggie burgers, on the other hand, offer a hearty and healthy alternative to traditional beef burgers.

This article provides two delectable recipes: one for falafel with avocado spread and another for veggie burgers with guacamole. The falafel recipe expertly combines chickpeas, herbs, and spices to create aromatic patties that are pan-fried until golden brown. The accompanying avocado spread adds a creamy and tangy twist, complementing the crispy falafel perfectly.

The veggie burger recipe showcases a combination of black beans, quinoa, and vegetables, resulting in a protein-packed and nutrient-rich patty. These burgers are cooked to perfection and paired with a luscious guacamole, made from fresh avocados, tomatoes, onions, and cilantro. The flavors in both recipes are well-balanced and burst with freshness, making them perfect for a satisfying meal.

Falafel W/ Avocado Spread - Veggie Burgers W/ Guacamole image

from Cooking light. A Latin twist on the classic Middle Eastern sandwich. Serve in halved pitas, garnish with microgreens and sliced red onion. **This is by no means falafel, but they are tasty! I suggest turning on the hood, these steam up quite a bit. Cooking Light says this makes 4 servings, but realistically it's 2 :)

This recipe originates from Gourmet & is really something special. I serve this every year for Rosh Hashana as an appetiser along with my challahs as pomegranate seeds are symbolically very significant. Very different from what you may be used to but oh so delicious!(prep time includes 1 hour in frig.)

Avocado Mayonnaise Spread image

I love avocados. I think they add the perfect touch to burgers, sandwiches and more. This is a simple spread to use in lieu of plain mayo.

Provided by The Miserable Gourm

Categories     Low Protein

Time 5m

Yield 4-6 serving(s)

Number Of Ingredients 4

1 avocado, mashed
2 tablespoons mayonnaise
1 tablespoon lime juice
1 dash salt

Steps:

  • Mash up the avocado until creamy.
  • Add lime and salt and mix well.
  • Stir in Mayonnaise and you're ready to spread!
  • Will keep about a week in a covered container.

Tips:

  • For the falafel, use dried chickpeas that have been soaked overnight. This will help them cook evenly and prevent them from becoming too dry.
  • When blending the falafel mixture, be careful not to over-blend it. You want the mixture to be coarse enough to hold its shape when it's formed into balls.
  • When frying the falafel, make sure the oil is hot enough before adding the balls. This will help them cook evenly and prevent them from sticking to the pan.
  • For the avocado spread, use ripe avocados that are soft and easy to mash. This will help create a smooth and creamy spread.
  • When making the guacamole, use fresh cilantro and lime juice. This will add a bright and flavorful taste to the guacamole.
  • For the veggie burgers, use a variety of vegetables that you like. This will help create a flavorful and nutritious burger.
  • When grilling the veggie burgers, make sure the grill is hot enough before adding the burgers. This will help them cook evenly and prevent them from sticking to the grill.

Conclusion:

These recipes are a great way to enjoy a delicious and healthy meal. The falafel and veggie burgers are packed with protein and fiber, while the avocado spread and guacamole are a good source of healthy fats. These recipes are also easy to make, so you can enjoy them any night of the week.
