Tips:

  • Choose the right eggplant: Select small, tender eggplants with smooth, unblemished skin. Avoid large, mature eggplants as they can be bitter and have tough skin.
  • Slice the eggplant evenly: Cut the eggplant into 1/2-inch thick rounds to ensure even cooking. Thicker slices may not cook through properly, while thinner slices may become too soft and mushy.
  • Remove the bitterness from the eggplant: Salting the eggplant slices and letting them rest for 30 minutes before cooking helps to draw out the bitter juices. Rinse and pat dry the slices thoroughly before cooking to remove excess salt.
  • Use a good quality pizza sauce: The pizza sauce is a key component of these mini pizzas, so choose a sauce that you enjoy the taste of. You can use a store-bought sauce or make your own using fresh tomatoes, herbs, and spices.
  • Don't overload the eggplant slices: When assembling the mini pizzas, be sure not to overload the eggplant slices with toppings. Too many toppings can make the pizzas soggy and difficult to eat.
  • Cook the mini pizzas until the eggplant is tender and the cheese is melted and bubbly: The cooking time will vary depending on the thickness of the eggplant slices and the type of cheese used. Keep an eye on the pizzas while they are cooking to prevent them from overcooking.

Conclusion:

These fake-out mini pizzas made with eggplant are a delicious and healthy alternative to traditional pizzas. They are easy to make and can be customized with your favorite toppings. The eggplant provides a hearty and flavorful base for the pizzas, while the pizza sauce, cheese, and toppings add a variety of flavors and textures. Whether you are looking for a quick and easy weeknight meal or a fun appetizer for a party, these mini pizzas are sure to be a hit!
