Steps:
- 1. In a large pot heat olive oil and add onions till just tinder but not browned, crumble hamburger and sausage and just cover with water, work with hands to break up ground meats. Cook on medium for 1 hour.
- 2. Add remaining ingredients and simmer for two more hours.
- 3. If you like a thinner sauce add more water half way through the final two hours. If you like thicker, simmer awhile longer uncovered.

- 1. In a large pot add hamburger and enough water to cover meat. Work meat with hands to crumble. Cook over medium till meat is done.
- 2. Add remaining ingredients and cook for an hour and a half, add more water if needed to thin. 1/4 teaspoon of red pepper flake may be added durning the last half hour if you prefer a little heat...enjoy

- Grill, steam or boil the hot dogs. In the meantime, heat the Chili until hot throughout. Place each hot dog in a bun, and top each with a generous amount of Chili, coleslaw and yellow mustard, and then serve.
- In a stockpot or Dutch oven, combine the beef (do not brown first), onions, tomato sauce, paste, chili powder, sugar, salt, pepper, garlic salt and 2 cups water. Mix until combined, then add the bay leaves. Cover and simmer over medium-low heat for about 2 hours.
- Stir in the vinegar and simmer another 30 minutes.

- Brown ground beef & onion together, chopping meat into small pieces. Drain & return to skillet.
- Add tomato sauce & chili powder. Simmer over med-low heat, stirring often, until sauce is desired consistency. Taste & add more chili powder, if needed. Stir well.
- Variations: For the meat, use ground venison, veggie burger, ground turkey, etc... Chopped green pepper can be added with the onion. Some folks like a splash of tabasco or hot sauce.
- Serve sauce over hot dog in a bun. In West Virginia, traditionally, hot dogs come with sauce, mustard, and (chopped raw) onions OR sauce & slaw. But make yourself happy with your own combinations!
