1/4 cup hot sauce
1 medium egg
1 cup all purpose flour
3/4 cup plain bread crumbs
1 tbsp garlic powder
1 tbsp onion powder
2 tsp seasoning salt
1 tsp ground black pepper
1 1/2 tsp poultry seasoning
Vegetable oil to spritz the chicken (I used peanut oil)

Steps:

  • Preheat the oven to 400 F.
  • Make sure that the chicken is nice and clean, then set to the side.
  • Next, combine the hot sauce and egg in a bowl. Mix until well combined.
  • Pour the hot sauce and egg mixture all over the chicken, and make sure that the chicken is nicely coated.
  • Now combine the flour, bread crumbs, seasoning salt, black pepper, onion powder, garlic powder, and poultry seasoning. Mix until well combined.
  • Once the flour and seasonings are well combined, coat all of the pieces of chicken.
  • Now grab a cookie sheet or sheet pan and cooling rack. Place the cooling rack on top of the cookie sheet.
  • Spray the rack with with vegetable oil, then place the chicken on top of the rack.
  • Spray each piece of chicken with oil until it's well coated. Make sure to get both sides.

2½ tablespoons kosher salt (divided)
6 chicken thighs (bone-in, skin-on)
2 tablespoon unsalted butter
½ cup all-purpose flour
1 teaspoon ground black pepper

Steps:

  • First, mix two cups of water and two tablespoons of kosher salt in a large bowl to brine the chicken. Next, add the thighs and make sure they are completely submerged. Cover, and refrigerate for at least four hours, up to 24 hours.
  • When you are ready to bake the thighs, preheat your oven to 400 degrees F.
  • Remove the poultry from the refrigerator, drain, and pat dry with paper towels.
  • Place the butter in a 9x13 metal roasting pan.
  • Place the pan in the oven to allow it to heat up and the butter to melt. Watch it carefully, and don't let the butter burn; you want the thighs to start cooking as soon as they hit the pan.
  • While the pan is heating, place the flour, remaining salt, and pepper in a large plastic storage bag. Add the thighs, a piece at a time, and shake well until it's thoroughly coated. Shake off any excess flour and repeat with the rest of the chicken.
  • Remove the pan from the oven and place the thighsn in it, skin side down.
  • Oven-fry the chicken for 30-40 minutes, or until the bottom is golden brown and crispy.
  • Remove from the oven and use a spatula and turn the chicken over. Cook for an additional 20 minutes.
  • Remove the chicken from the oven, and drain on paper towels.
  • If desired, season with additional salt and pepper and serve immediately.

I am a retired caterer. I have used this recipe for many years. Everyone I have served it too seems to just love it and always come back for seconds. Its one of the simplest and easiest fried chicken recipes you will ever prepare. The Ritz cracker crumbs were used many years ago as a last minute substitute for saltines. I think this was a one of my best substitutes ever. Needless to say I never used saltines again. I hope you enjoy!

1 whole broiler-fryer chicken (cut into pieces)
1 cup butter (melted) or 1 cup margarine (melted)
2 cups Ritz crackers (crushed)
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon paprika
1/4 teaspoon sage
1/4 teaspoon cumin

Steps:

  • Spray a sheet cake style pan with non stick canola spray.
  • Preheat oven to 400°F
  • Wash chicken thoroughly and lay on paper towels and pat dry.
  • Melt butter in a medium sized dish.
  • Place Ritz cracker crumbs in a large bowl.
  • Mix all seasonings together in a small bowl.
  • Dip chicken pieces in the butter then immediately into the cracker crumbs.
  • Place chicken in the sprayed pan.

It's a delicious EASY recipe that works for chicken legs, thighs, or breasts. Make PLENTY in the summer to eat as is, or use leftovers for chicken SALAD!

10 chicken legs (or 3 chicken breasts, bone-in works just fine and is more economical than boneless)
1 tablespoon dried rosemary
1/2 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon onion powder
1 tablespoon potato starch
2 tablespoons oats
1 pinch powdered ginger (optional)
canola oil cooking spray
1/2 cup water

Steps:

  • For moistest results soak chicken pieces in a bowl of salted water for 15 minutes before cooking.
  • Line baking tray with foil and spray lightly with oil.
  • Grind dry ingredients in coffee grinder or with pestle and mortar.
