This is a quick and wonderful cake for guests, birthdays or just you guys. It helps if you have a 12" non-stick skillet like the executive skillet from the Pampered Chef. Dont try this with a stainless pan. I love this pan for cakes because it has the simplicity of a 9x13 pan but the sexy looks of a layer cake. And the pan...

1 box chocolate cake mix of your choice
1 c milk
3 eggs
1/3 c melted butter plus 1 extra tblsp. for the pan
4 oz semi-sweet baking chocolate, bars chopped or chips
1 jar caramel topping for ice cream
1/3 c chopped pecans

Steps:

  • 1. You will need a 12" non-stick oven proof skillet or a 9 x 13 pa. . Preheat oven to 350. Melt 1 Tbsp. butter in the skillet on the stove top, spreading around.
  • 2. Mix cake mix, milk, eggs and 1/3 cup melted butter with a hand or standing mixer until smooth. Pour into your pan, spreading evenly. These pans are good at distributing heat so you do not get a domed cake.
  • 3. Bake about 30 minutes, testing with a straw to see if done. Let cool 5 minutes, then carefully turn out onto a large platter.
  • 4. Put the chocolate and half the caramel sauce in a microwave safe dish and heat for 30-45 seconds, stirring until smooth. (or use small saucepan on stove)
  • 5. Pour sauce over cooled cake, smoothing out to edges so it will drip over. Add the chopped nuts . If you want to drizzle the rest of the caramel sauce over the whole thing. Now take a picture because it is beautiful and yummy!

Number Of Ingredients 11

4 1/2 cups sugar
1/2 cup butter
1 (12-oz.) can (1 1/2 cups) evaporated milk
4 1/2 cups miniature marshmallows
1 (12-oz.) pkg. (2 cups) semisweet chocolate chips
12 oz. sweet baking chocolate, chopped
2 oz. unsweetened chocolate, chopped
2 teaspoons vanilla
1 cup chopped pecans
25 caramels (from 14-oz. pkg.), unwrapped
2 tablespoons water

Steps:

  • Line 15x10x1-inch baking pan with foil, extending foil over sides of pan; grease foil. In Dutch oven or 4-quart saucepan, combine sugar, butter and evaporated milk; cook over medium heat until sugar is dissolved, stirring frequently. Bring to a full boil, stirring constantly. Without stirring, boil 5 to 6 minutes over medium heat or until candy thermometer registers 234°F. Remove saucepan from heat.

  • In medium saucepan, cook caramels and water over low heat until melted, stirring frequently. Drizzle melted caramels evenly over fudge. Sprinkle remaining pecans over caramel. Cool 2 hours.
  • Use foil to lift fudge from pan; remove foil. Cut into 1-inch squares.

Tips:

  • Prep your Ingredients: Measure and gather all the necessary ingredients before starting the recipe. Ensure the butter is softened at room temperature to blend smoothly with the sugar. Properly measure the flour to avoid altering the cake's texture.
  • Don't Over-mix: Avoid over-mixing the batter. Mix only until the ingredients are fully incorporated. Over-mixing can result in a dense, tough cake.
  • Temperature Matters: Preheat the oven accurately. Use an oven thermometer to ensure the desired baking temperature is reached. Proper preheating is crucial for an evenly baked cake.
  • Bake Evenly: Place the cake pan in the center of the oven for uniform baking. Avoid opening the oven frequently during baking as this can cause the cake to fall.
  • Test for Doneness: Insert a toothpick or skewer into the center of the cake. If it comes out clean or with just a few moist crumbs attached, the cake is done.
