PIZZA QUESADILLAS
When my husband and I needed a quick meal, I fixed this recipe using leftover ingredients. Unlike traditional Mexican quesadillas, it calls for Italian meats, cheeses and seasoning. Serve it with a green salad for a simple dinner for two. -Barbara Rupert, Edgefield, South Carolina

Tips:
- Use Fresh Ingredients: The fresher the ingredients, the tastier your quesadilla pizza will be. Use ripe tomatoes, crisp bell peppers, and flavorful cheese.
- Don't Overcrowd the Quesadilla: When filling your quesadilla, don't overcrowd it. If you put too much filling in, it will be difficult to fold and cook evenly.
- Cook the Quesadilla Over Medium Heat: Cooking the quesadilla over medium heat will help to prevent the tortilla from burning and the cheese from melting too quickly. Be patient and cook the quesadilla until it is golden brown and crispy.
- Use a Variety of Toppings: There are endless possibilities when it comes to toppings for your quesadilla pizza. Get creative and use your favorite ingredients. Some popular options include:
- Shredded chicken or beef
- Sautéed vegetables
- Salsa
- Sour cream
- Guacamole
