Time 40m

Number Of Ingredients 17

2 tablespoons olive oil
1 large/extra-large sweet vidalia onion, diced small
1 pound lean ground beef (I used 90% lean)
1 large/extra large red bell pepper, diced small
1 cup corn (I used frozen straight from the freezer)
1 cup elbow macaroni (dry, uncooked)
1 cup water
one 14.5-ounce can diced tomatoes (do not drain)
one 8-ounce can tomato sauce
1 tablespoon cumin, plus more if desired
1 tablespoon chili powder
2 teaspoons Mexican oregano (regular oregano may be substituted)
1 teaspoon kosher salt, plus more if desired
1 teaspoon freshly ground black pepper, or to taste
pinch cayenne pepper, optional and to taste
1 to 2 cups shredded cheese (I used a Mexican shredded cheese blend)
fresh cilantro, finely minced for garnishing

Steps:

  • To a large skillet, add the olive oil, onion, beef, and cook over medium-high heat until beef is cooked through and onion is soft and translucent, about 7 minutes; crumble beef and stir frequently to ensure even cooking.
  • Add the bell pepper, corn, macaroni, water, tomatoes, tomato sauce, cumin, chili powder, oregano, salt, pepper, stir to combine.
  • Lower heat to medium low, cover, and allow mixture to simmer for about 20 minutes, or until pasta is tender and cooked through. Stir a couple times while simmering to ensure even cooking.
  • Uncover, turn off the heat, add the cheese, and stir to combine and until melted. Taste and check for seasoning balance. If necessary add more salt or seasonings (I added an additional 1 teaspoon salt and 1 teaspoon of cumin).
  • Evenly sprinkle the cilantro and serve immediately.

Tips:

  • Use a quality cheese blend: The type of cheese you use will make a big difference in the final flavor of your mac and cheese. A good blend of cheddar, mozzarella, and Parmesan is a classic choice, but you can also experiment with other cheeses, such as Gruyère, Gouda, or Pepper Jack. For the recipe in this article, a combination of cheddar, Monterey Jack, and queso Oaxaca is recommended, as it creates a gooey, flavorful sauce.
  • Cook the pasta al dente: Al dente pasta is slightly firm to the bite and will hold its shape better in the cheesy sauce. Be sure to cook the pasta according to the package directions, but err on the side of undercooking rather than overcooking.
  • Make a roux: A roux is a mixture of butter and flour that is used to thicken sauces. It helps to create a smooth, creamy texture in the mac and cheese. To make a roux, melt the butter in a saucepan over medium heat. Once the butter is melted, whisk in the flour and cook for 1-2 minutes, or until the mixture is golden brown. This will help prevent the cheese sauce from becoming grainy.
  • Use a combination of milks: Using a combination of milk and cream or evaporated milk will help to create a rich, flavorful sauce. Whole milk will give the sauce a creamier texture, while evaporated milk will add a slightly thicker consistency.
  • Season the sauce: Be sure to season the cheese sauce with salt, pepper, and other spices, such as garlic powder, onion powder, or chili powder. This will help to enhance the flavor of the cheese and make the mac and cheese more flavorful.
  • Add some extras: Feel free to add other ingredients to your mac and cheese, such as cooked bacon, diced tomatoes, chopped green chilies, or even a scoop of sour cream. This will help to create a more interesting and flavorful dish.

Conclusion:

Extra cheesy Mex-Mac-N-Cheese is a delicious and comforting dish that is perfect for any occasion. It is easy to make and can be customized to your liking. With its creamy, cheesy sauce, spicy Mexican flavors, and crispy tortilla chip topping, this dish is sure to be a hit with everyone who tries it. So next time you are looking for a quick and easy meal that the whole family will love, give this recipe a try.
