This is an ancient recipe! The word "zaafrani" means "Saffron" or what we call "Kesar" in Hindi. In my home, we use this in plenty during the winter/cooler months. The word "murg" is the Hindi equivalent for "Chicken". This delicious recipe was telecast at 11:30am Oman time on this Sunday on Mirch Masala, Star Plus. It was cooked by a chef in Jaipur who has been cooking since he was a young boy. Now, he's an old man with a long white moustache, a pot belly and a beaming smile! This chicken looked so yummy while he was cooking it in his pot on TV, I can't wait to try it, I will be doing that very soon! Join me, will you? :)

750 g chicken, cleaned, washed and cut into pieces
1 teaspoon salt, to taste
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder, paste of
1 pinch saffron, divided
4 -6 tablespoons cashews, paste of, divided
2 tablespoons fresh low-fat plain yogurt, beaten
4 -5 tablespoons oil
2 -3 bay leaves
4 -5 cloves
2 tablespoons onion paste (paste of 2 onions)
1 teaspoon garlic paste
2 tablespoons fresh coriander leaves, chopped finely

Steps:

  • To make this yummy chicken, first prepare the marinade.
  • Before doing that, soak red chili powder in water and prepare a paste of it.
  • Now, in a bowl, mix together, the chicken, salt, ginger-garlic paste, 2-3 tablespoons of cashewnut paste, a pinch of saffron, yogurt and a tsp of red chili paste.
  • Mix well, using your hand, and keep aside for 15-20 minutes.
  • Heat oil in a skillet.
  • Add bay leaves and cloves.
  • Stir-fry for a minute.
  • Add onion paste and sauté till it turns brown.
  • Add a teaspoon of garlic paste.
  • Continue to sauté till the raw smell of garlic is gone.
  • Add the marinated chicken pieces and mix well.
  • Cover and cook for 15 minutes or until the chicken is tender.
  • Add 2-3 tablespoons of cashewnut paste and a pinch of saffron.
  • Mix well.
  • Remove from flame.
  • Garnish with fresh chopped coriander leaves.
  • Serve hot with rotis/parathas/naan/kulcha!

1 1/2 lbs raw chicken
1 teaspoon red chili powder
1 teaspoon ginger-garlic paste
1 teaspoon salt (or to taste)
1 1/4 cups plain yogurt
1/3 cup unsalted butter
1 teaspoon black cumin seeds
1 1/2 cups tomato puree
1 teaspoon sugar
1 teaspoon red chili powder
1 teaspoon salt (or to taste)
1/3 cup fresh cream
4 green chilies (sliced)
1 teaspoon dried fenugreek leaves (crushed)

Steps:

  • For the marinade,mix red chilli powder, ginger garlic paste, salt and yogurt together. Marinade is ready.
  • Now mix the raw chicken in the marinade and keep it in the refrigerator overnight.
  • Then roast the marinated chicken in a an oven at 400 F for about 5-10 minutes till it is three fourth done.
  • For the gravy, heat white butter in pan. Add black cumin seeds, tomato puree, sugar, red chilli powder and salt. Mix it well.
  • Now add the prepared chicken, fresh cream, sliced green chillies and crushed fenugreek leaves.
  • Cook till chicken is done.
  • Butter Chicken is ready to eat.
  • Serve hot with rice or naan. (a type of Indian bread avaialable at Trader Joe's).

1 inch fresh ginger, peeled and coarsely chopped
8 garlic cloves, peeled
6 tablespoons blanched almonds, slivered
4 tablespoons water
7 tablespoons ghee
3 lbs chicken parts
10 cardamom pods
1 inch cinnamon stick
2 bay leaves
5 whole cloves
2 medium onions, peeled and finely chopped
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper
7 tablespoons yoghurt
300 ml light cream
1 1/2 teaspoons salt
2 tablespoons golden raisins
1/2 teaspoon garam masala

Steps:

  • Put the ginger, garlic, 4 tablespoons of the almonds, and the water into a blender and blend until you have a paste.
  • Heat oil in a skillet over medium heat. When hot add chicken in a single layer and fry until golden brown on the bottom. Now turn all the pieces over and brown the second side. Remove the ckicken pieces with a slotted spoon and set them aside.
  • In the same oil add cardamom pods, bay leaves, cinnamon stick and cloves. Stir and fry them for a few seconds. Now put in the onions. Stir and fry the onions for 3-4 minutes or until they are lightly browned. Put in the paste from the blender, and the cumin and cayenne. Stir and fry for 2-3 minutes or until oil seems to separate from the spice mixture and the spices are lightly browned. Whip yoghurt with a fork and add 1 tablespoon at a time to the onion masala until yoghurt is well blended.
  • Add the cream and salt, plus the chicken and any juices that may have accumulated. Bring to a simmer. Cover, turn heat to low, and cook gently for 20 minutes. Add the raisens and turn the chicken pieces. Cover again and cook another 10 minutes or until the chicken is tender. Add the garam masala. Stir to mix.
  • Put the remaining almonds on a baking sheet and put them under the broiler until they brown lightly, about 5 minutes. Keep an eye on them, and shake the pan frequently. Sprinkle the roasted almonds over the chicken when serving.

1 kg chicken piece (thigh, breast, leg or any you prefer)
3 chopped garlic cloves
1 teaspoon ginger paste
1 teaspoon salt
1 teaspoon pepper
1 onion, chopped
1 teaspoon cumin seed
1 teaspoon red chili powder
1/2 teaspoon garam masala
1 tablespoon cooking oil
1 cup yogurt
1 sprig fresh coriander

Steps:

  • Boil chicken pieces in water along with 2 cloves of chopped garlic, ginger paste, salt and pepper.
  • Once chicken is boiled, take the pieces out of the stock. Set stock aside.
  • In a wok or deep cooking pan with lid, pour cooking oil and saute onions and garlic together.
  • Once the onions and garlic turn golden brown, add cumin seeds, chicken pieces, garam masala, and red chilli powder.
  • Stir fry this mixture for 4 minutes.
  • Now add half a cup of stock.
  • Also add yogurt to this mixture.
  • Cover and let this cook on medium heat for 20 minutes.
  • Check after 20 minutes to see if the oil is visible on the sides. That means you're done.
  • You can let your chicken a little more to thicken the gravy or serve right away with rice or bread.
  • Garnish with chopped corriander leaves.

2 boneless chicken breasts
2 tablespoons butter
1 cup rice
1 (3 ounce) package onion soup mix
1 bay leaf
1 teaspoon sage
1 teaspoon celery seed
1 teaspoon mustard seeds
1 teaspoon thyme
1 teaspoon pepper
1 teaspoon salt
1/2 teaspoon saffron (or turmeric)
2 cups water
1 (8 ounce) can cream of mushroom soup
2 large carrots, cut into strips

Steps:

  • Preheat oven to 375º.
  • Melt butter in skillet. Cook chicken breasts until mostly cooked.
  • In a large measuring cup (1 quart), mix onion soup mix, spices (feel free to sub whatever spices/seasoning and amounts that you want.) and can of cream of mushroom soup. Fill measuring cup with water to the 1 quart (4 cup) line.
  • In large casserole dish, add rice and carrots. Add partly cooked chicken on top of rice and carrots. Pour soup mixture over chicken and rice.
  • Cover casserole with aluminium foil.
  • Cook for 45 minutes, or until rice has absorbed almost all of the liquid.

1/2 teaspoon saffron
3 lbs chicken pieces
3 tablespoons butter or 3 tablespoons oil
1 large onion, julienned
2 teaspoons finely grated gingerroot
1 -3 fresh chili pepper, or to taste, red or green
2 -3 cloves garlic, crushed
1/2 teaspoon ground cardamom
1 1/2 teaspoons salt

Steps:

  • Toast the saffron strands in a dry pan over a medium heat for about 1 minute taking care not to burn them.
  • Cool, and then crush them with the back of a spoon.
  • Dissolve them in 1 tablespoon of very hot water.
  • Heat the ghee (or whatever you use), and gently fry the onion, garlic, ginger and chillis until the onion is soft and golden.
  • Add garlic.
  • Add the dissolved saffron to the pan with the cardomon, then add the chicken.
  • Turn the chicken pieces in the mix, coating well.
  • Add the salt, cover and cook for 25 minutes until the chicken is tender.
  • Uncover the pan and continue cooking, turning often until the liquid is almost gone.

2 large sweet onions, chopped medium
1 tablespoon ground ginger
1 teaspoon white pepper

2 sticks cinnamon

1 1/2-2 teaspoons salt
1/4 cup butter
1/4 cup olive oil

  • Mix all ingredients in a Dutch oven or heavy-bottomed pot.
