Yield 6 servings, serving size 3/4 cup

Number Of Ingredients 14

Nonstick cooking spray
Two 12-ounce bags frozen mixed berries, thawed (about 6 cups)
1/4 cup whole-wheat flour
1/4 cup sugar
1 orange, zest finely grated (about 2 teaspoons)
1/4 cup whole-wheat flour
1/4 cup all-purpose flour
2 tablespoons plus 1 teaspoon sugar, divided
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons chilled unsalted butter, cut into small pieces
1/3 cup low-fat buttermilk
2 tablespoons canola oil

Steps:

  • Preheat the oven to 400 degrees F. Coat an 8 by 8-inch baking dish with cooking spray.
  • For the filling: In a large bowl, toss the berries with whole wheat flour, sugar and zest. Transfer the berry mixture to the baking dish and set aside.
  • For the topping: In a medium bowl whisk together the whole-wheat flour, all-purpose flour, 2 tablespoons of sugar, baking powder, baking soda and salt. Cut in the butter using 2 knives or a pastry cutter until many small pebble-sized pieces are formed.
  • In a small bowl or pitcher, whisk together the buttermilk and oil. Add the buttermilk-oil mixture to the dry ingredients and mix until just moistened. Do not over mix. BEST-IN-THE-WEST BERRY COBBLER

Best-In-The-West Berry Cobbler image

The name says it all! It has a delicious sugar crackle topping that forms by pouring the boiling water over the top before baking. This is my favorite cobbler recipe. Easy, impressive, and versatile. Can use any combination of berries, frozen or fresh.

Time 1h20m

Yield 4-6 serving(s)

Number Of Ingredients 9

2 -3 cups berries (blueberries, blackberries, marionberries, or raspberries. I usually use a combo bag of frozen berrie)
3 tablespoons shortening
1 1/4 cups sugar, divided
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
1 tablespoon cornstarch
1 cup boiling water

Steps:

  • Spread berries in a greased 8 inch square pan.
  • Cream shortening and 3/4 cup sugar well.
  • Sift flour, baking powder, and salt together.
  • Add alternately with milk to creamed mixture. Batter will be thick.
  • Spread batter over berries.
  • Combine remaining sugar and cornstarch together then sprinkle evenly over batter. *NOTE* This is a juicy cobbler but if you want the berries and sauce to be thicker add an extra 1/2 to 1 tablespoon of cornstarch to the remaining sugar.
  • Pour boiling water over all. Do not mix.
  • Bake at 350* for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 mins longer than normal).

Tips:

  • Choose the right berries: Use fresh, ripe berries for the best flavor. If you can't find fresh berries, frozen berries will also work.
  • Don't overmix the batter: Overmixing the batter will make the cobbler tough. Mix just until the ingredients are combined.
  • Use a large baking dish: The cobbler will rise during baking, so use a large baking dish to prevent it from overflowing.
  • Bake the cobbler until the crust is golden brown and the berries are bubbling: The cobbler is done when the crust is golden brown and the berries are bubbling. If you're not sure if it's done, insert a toothpick into the center of the cobbler. If it comes out clean, the cobbler is done.
  • Let the cobbler cool slightly before serving: The cobbler will be very hot when it comes out of the oven. Let it cool slightly before serving so that the berries don't burst.

Conclusion:

Essie's Berry Cobbler is a delicious and easy-to-make dessert that is perfect for any occasion. With its sweet and tart berries, buttery crust, and flaky topping, this cobbler is sure to be a hit with everyone who tries it. So next time you're looking for a quick and easy dessert, give Essie's Berry Cobbler a try. You won't be disappointed!
