3 large egg whites, at room temperature
Pinch of fine sea salt
3/4 cup superfine sugar
1/8 teaspoon cream of tartar
1/4 teaspoon pure vanilla extract
2 teaspoons instant espresso powder
2/3cup mini semisweet chocolate chips

Steps:

  • Place an oven rack in the center of the oven and preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Set aside.
  • In a stand mixer fitted with the whisk attachment, beat the egg whites and salt on medium-low speed until frothy, about 1 minute. With the machine on medium-high speed, gradually add the sugar, about 1 tablespoon at a time. Add the cream of tartar, vanilla extract and espresso powder.   • In a double boiler or metal bowl over hot water, melt milk chocolate in espresso; stir until smooth. Remove from the heat., In a large bowl, beat butter and sugar until crumbly, about 2 minutes. 4 cups flour

1 cup brewed espresso, liquid shots, not grounds
2 cups semi-sweet chocolate chips

Steps:

  • Cream the butter, sugar and brown sugar together.
  • Start on a slow speed until blended, then turn it up to the highest speed until it is light and fluffy.
  • Add the eggs and vanilla to the mixture and mix on medium speed until the eggs are fully broken up and combined.
  • Do not over mix this part.
  • Sift the flour, baking powder, and salt together, add to the mixture and mix until combined.

Nonstick vegetable oil spray
1 12-ounce package semisweet chocolate chips
3 cups all purpose flour, divided
2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 1/2 cups (packed) golden brown sugar
2 1/2 teaspoons vanilla extract
1 teaspoon maple extract
4 large eggs
1 cup buttermilk
Glaze:
1 cup powdered sugar
2 tablespoons pure maple syrup
2 tablespoons (or more) whipping cream
1 1/2 teaspoons instant espresso powder

Steps:

  • For cake:
  • Preheat oven to 325°F. Butter 12-cup Bundt pan. Spray pan generously with nonstick spray. Dust pan lightly with flour. Mix chocolate chips and 2 tablespoons flour in medium bowl.
