ESPINACA

I got the idea for this from Abuelo's Restaurant. It's super simple and the only way the kids will eat spinach. It's great served with steak. (I just guessed on the actual amounts. I always just eye it.)

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 tablespoons butter
2 -3 bunches fresh spinach
15 ounces corn (drained, I usually use 1/2 can)
1 -2 cup cheese (I use the Mexican blend shredded stuff)
1 teaspoon salt
1 -2 teaspoon cumin
1/2 teaspoon garlic powder

Steps:

  • In a large skillet: Reduce down the spinach in the butter, add the corn, and stir in cheese (I will sometimes add a little milk to melt in the cheese if necessary)
  • Add the seasoning to taste. Voila!

Tips:

  • Prep your ingredients ahead of time: Chop the spinach, green onions, and water chestnuts before you start cooking. This will make the assembly process much easier.
  • Use fresh spinach: Fresh spinach has a more vibrant flavor than frozen spinach. If you're using frozen spinach, be sure to thaw it and squeeze out all excess water before using.
  • Don't overcook the spinach: Spinach cooks very quickly, so be careful not to overcook it. Overcooked spinach will become mushy and lose its flavor.
  • Use a good quality sour cream: Sour cream is one of the main ingredients in spinach dip, so be sure to use a good quality brand. A good sour cream will be thick and creamy, with a slightly tangy flavor.
  • Season the dip to taste: Everyone has different preferences when it comes to seasoning, so be sure to taste the dip before serving and adjust the seasonings accordingly.

Conclusion:

Spinach dip is a delicious and easy-to-make appetizer that is perfect for any occasion. It's creamy, cheesy, and packed with flavor. Plus, it's a great way to get your daily dose of vegetables. So next time you're looking for a quick and easy snack or appetizer, give this spinach dip recipe a try. You won't be disappointed!
