EASY CHICKEN-ESCAROLE SOUP
Escarole is a pleasantly bitter green that cooks quickly, so if you want to keep some of its texture in a soup, stir it in at the end, just to wilt it. The chicken is browned to provide depth of flavor, adding chickeny goodness to the olive oil and enriching the broth. If you have any white beans on hand, strain them and add to the soup during the last 5 minutes of cooking.

Steps:
- In a small Dutch oven or a large soup pot, heat the oil over medium-high heat. Sprinkle the chicken thighs on both sides with salt and pepper; put them in the pan, fattier side down, and cook until browned on the bottom and some of the fat has rendered out, 4 minutes. Flip the thighs over, tuck the garlic in around them and cook until the garlic is browned and aromatic, about 1 minute. Pour in the chicken stock and simmer until the thighs are cooked through, about 12 minutes. Remove the thighs from the pot and cut into bite-size pieces.
- While the soup is cooking, cut the leaves of the escarole away from the core and wash well in cold water, especially the white part near the base, where most of the dirt collects. Tear the leaves into 2-inch pieces.
- Stir the escarole into the pot a handful at a time until it all fits, then cover and cook until tender, 3 minutes. Return the chicken to the pot and bring back to a simmer. Serve hot.

ESCAROLE SOUP WITH RICE
This is true comfort food. I love this with some good bread. Make it with homemade broth if you can. Meat broth can be chicken, beef a combination or whatever type of meat you want. It probably would be good with vegetable broth too. I usually save chicken wings (since we usually don't eat them anyway)in a freezer bag until I need to make a stock. I also save uncooked bones and misc poultry and beef parts in the freezer for the same use. I then take out as much as I need and cook the stock the night before I intend to use it. This soup should be dense but soupy. Have extra broth on hand in case it gets too thick on you.

LEMONY EGG SOUP WITH ESCAROLE
This lemon-scented soup, based on a Greek avgolemono, is a warming meal in the depths of winter. Made with good chicken broth, it's familiar and comforting. But fresh lemon adds a sunny brightness while the egg and rice thicken things up, making the broth richer and heartier. To add vegetable matter, I stir some escarole into the soup, letting it wilt until silky and soft. If you like you can substitute spinach or baby kale for the escarole, adding an extra few minutes to the cooking time if using the kale.

Tips:
- Choose fresh escarole: Look for escarole with crisp, ярко-зеленые листья. Avoid any escarole that is wilted or has brown spots.
- Wash the escarole thoroughly: Escarole can be gritty, so it's important to wash it thoroughly before using it. Rinse the escarole under cold water and shake it dry.
- Use a variety of vegetables: In addition to escarole, this soup also includes carrots, celery, and onion. You can also add other vegetables that you like, such as potatoes, green beans, or peas.
- Use a good quality chicken broth: The chicken broth is the base of this soup, so it's important to use a good quality broth. You can use homemade chicken broth or a store-bought broth that is low in sodium.
- Simmer the soup for at least 30 minutes: This will allow the flavors of the vegetables and chicken to meld together.
- Add the rice during the last 10 minutes of cooking: This will give the rice time to cook through without becoming overcooked.
- Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of sour cream.
Conclusion:
Escarole soup with chicken and rice is a hearty, flavorful soup that is perfect for a cold winter day. It's also a great way to use up leftover chicken. This soup is easy to make and can be tailored to your own taste. So next time you're looking for a delicious and healthy soup, give this escarole soup a try.
