2 tablespoons olive oil
1 large onion (chopped)
3 garlic cloves (chopped)
1 pound escarole (cleaned & chopped)
1 tablespoon lemon juice (Optional - used to cut the bitterness)
4 cups chicken stock
1 ounce parmesan cheese rind (about 2 inches (optional))
Salt & Pepper (to taste)
8 oz pasta
Parmesan cheese (grated for serving)

Steps:

  • Heat 2 tablespoons of olive oil in a large pot over medium heat.
  • Add the onion and cook until soft.
  • Add the garlic and cook another minute.
  • Add the chicken stock, Parmesan cheese rind, and a pinch of salt.
  • Add the escarole and allow to wilt about 2 minutes.
  • Cover and simmer until the escarole is the softness you prefer.
  • While the soup simmers, cook the pasta according to package instructions and set aside until needed.

2 tablespoons butter
12 ounces spaghetti, broken in thirds
2 tablespoons olive oil
4 cloves garlic, chopped
1 large onion, chopped
Herb bundle, mix of fresh thyme and parsley sprigs
Salt and pepper
1 large head escarole, chopped
A few grates nutmeg
4 cups chicken stock
1 lemon, zested and juiced
Grated Parmigiano-Reggiano, for passing

Steps:

  • In a medium soup pot, melt the butter over medium heat. When it foams, add the pasta and cook until nutty, fragrant and deep golden brown. Transfer to a container to cool completely then cover and reserve.
  • To the pot add the olive oil, 2 turns of the pan, and then add the garlic, onions and herb bundle. Season with some salt and pepper, and then sweat the vegetables until tender.
  • Wilt the escarole into the onions and garlic and add some nutmeg. Add the stock and 2 cups water.
  • Cool the soup and store for a make-ahead meal. Reheat to a low boil, add the toasted pasta and cook to al dente. Stir in the lemon zest and juice, and serve in shallow bowls topped with some grated cheese.

1/3 cup extra virgin olive oil
5 -6 canned anchovy fillets
4 garlic cloves, finely chopped
1 teaspoon Worcestershire sauce
1 (32 ounce) vegetable broth or 1 (32 ounce) chicken broth
1 romaine lettuce hearts, coarsely chopped
1 head escarole, coarsely chopped
salt and pepper
1 lemon, juice of
romano cheese, freshly grated for topping

Steps:

  • Heat the oven to 300°F Toast the bread cubes in a single layer on a baking sheet for 20 minutes.
  • Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the anchovies and cook, stirring, until melted, 3 minutes. Lower the heat to low, add the garlic and cook for 5 minutes. Add the croutons and Worcestershire sauce and toss.
  • In a medium saucepan, bring the vegetable broth, romaine and escarole to a simmer, then cook for 5 minutes; season with salt and pepper. Turn off the heat and stir in the lemon juice.
  • Arrange the croutons in bowls and, using tongs, pile the greens evenly on top, then ladle in the broth. Top with the romano cheese.

3 or 4 cloves garlic, finely minced, plus 4 or 5 cloves garlic, thinly sliced
1/2 cup chopped onions
4 cups coarsely chopped escarole (about one head)
6 cups chicken or vegetable stock, or water
1/4 cup short-grain white rice, like arborio
Salt
freshly ground black pepper
Freshly grated Parmesan cheese (optional)

Steps:

  • Put 2 tablespoons oil in a large, deep saucepan over medium heat. When oil is hot, add minced garlic and cook until fragrant, about 2 minutes. Add onions and continue to cook, stirring frequently, until softened, about 5 more minutes. Add escarole and cook, tossing gently, until it begins to wilt, about another 3 minutes.
  • Add stock and rice to the pan, bring to a boil. Lower the heat, cover and cook about 20 minutes or until rice is tender.
