Mix in mayonnaise, then 2 teaspoons chopped chipotle chiles. Add more chopped chiles, if desired, for more heat. Season filling to taste with salt, if desired. LABNE DEVILED EGGS WITH PAPRIKA AND GINGER
Steps:
- To make the spice blend:
- Finely grind the mustard seeds and peppercorns together and immediately mix with the ajowan, paprika, and ginger.
- To make the deviled eggs:
- Put the eggs in a small saucepan and cover with cold water by 1 inch. Bring to a boil over high heat and then remove from the heat, cover, and let stand for 10 minutes.
- Tilting the saucepan, pour out the hot water, holding back the eggs with a slotted spoon. Run cold water into the saucepan until it is cold. Cover the eggs with cold water and let sit until the eggs are completely cold. Carefully peel the eggs and cut each in half lengthwise. To get clean cuts, use a very sharp knife and wipe the blade between each cut.
- Pop out the yolks and place them in a medium bowl, and set the whites on a cutting board. Smash the yolks with a fork until crumbly and add the labne, oil, 1 ¼ teaspoons of the spice blend, and a pinch of salt. Mash and stir until smooth. Season to taste with salt.
- Rub some of the remaining spice blend all over the cut sides and cavities of the egg whites to coat and set them cut-side up on a serving plate. Divide the yolk mixture among the cavities and sprinkle with any remaining spice blend.
- Do Ahead: The deviled eggs can be refrigerated in an airtight container for up to two days.

Yield Makes 20

Steps:
- Halve the eggs lengthwise and transfer the yolks to a mixing bowl. Set 20 egg white halves on a platter, cover, and refrigerate. This recipe uses 12 egg yolks, but only yields enough filling for 20 halves; reserve the extra 4 whites for another use.
- With a fork, mash the yolks to a smooth consistency. Add the mayonnaise, sour cream, truffle oil, and salt, and mix until smooth. (You can also do this using an electric mixer with a whip attachment.) Taste and season accordingly.
- Spoon the mixture into a pastry bag fitted with a plain or large star tip, then pipe the mixture evenly into the egg white halves. Or fill the eggs with a spoon, dividing the filling evenly.
- Top each egg half with a tiny sprinkle of black lava salt, a grind of fresh-cracked black pepper, and a chive flower, if using.
Tips:
- Use fresh, high-quality ingredients. Fresh eggs, mayonnaise, and herbs will make a big difference in the flavor of your deviled eggs.
- Hard-boil your eggs perfectly. Overcooked eggs will be dry and crumbly, while undercooked eggs will be runny. For perfectly hard-boiled eggs, place them in a single layer in a saucepan and cover them with cold water. Bring the water to a boil, then remove the saucepan from the heat and cover it. Let the eggs stand in the hot water for 10-12 minutes, then drain them and immediately place them in an ice bath to stop the cooking process.
- Pipe the filling into the egg whites. This will give your deviled eggs a more elegant look and make them easier to eat.
- Garnish your deviled eggs with fresh herbs, bacon bits, or paprika. This will add flavor and color to your dish.
Conclusion:
Deviled eggs are a classic party appetizer that are easy to make and always a crowd-pleaser. With a few simple ingredients and a little creativity, you can create delicious and unique deviled eggs that will impress your guests. So next time you're looking for a last-minute appetizer, give deviled eggs a try. You won't be disappointed.
