9 cups water
1 tablespoon salt, plus extra for seasoning
2 1/2 cups yellow cornmeal or polenta
1 1/2 cups freshly grated Parmesan
1 1/2 cups whole milk, at room temperature
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
1/3 cup chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Bring the water to a boil in a large, heavy pot. Add the salt. Gradually whisk in the cornmeal. Reduce the heat to low and cook, stirring often, until the mixture thickens and the cornmeal is tender, 15 to 20 minutes. Remove the pot from the heat. Add the cheese, milk, butter, and parsley. I had this with regular, hot stewed tomatoes that I served along side. What a hearty meal! This would be a great side to almost any meat or vegetable dish. The recipe didn't call for garlic, but I added some garlic powder to mine. Oh, so tasty!

4 cups milk, plus more as needed
3 tablespoons butter
2 teaspoons salt
2 cups polenta
1/2 cup creme fraiche
1/3 cup Parmigiano-Reggiano

  • In a large saucepan, bring the water, milk and butter to a boil. Add 2 teaspoons of salt to the water and whisk in the polenta. Whisk constantly for 3 to 4 minutes to prevent lumps. 1 1/2 teaspoons salt, to taste
1/8 teaspoon pepper
1 cup coarse-ground uncooked polenta
2 tablespoons butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F.
  • In a 1 to 1-1/2 quart baking pan, stir together the water, salt, pepper and polenta.
  • Add the pieces of butter.
  • Place the container, uncovered, in the center of the top rack of the oven and bake for 40 minutes.
