1 cup seedless raspberry jam
8 ounces fresh raspberries
10 fluid ounces heavy cream
3 egg yolks
3 tablespoons white sugar
10 fluid ounces heavy cream
2 ounces sliced almonds

Steps:

  • Spread a little jam on each piece of cake and place in the bottom of a large glass bowl. Sprinkle raspberries over cake.
  • Heat 10 fl. oz. cream in a medium saucepan over medium heat. While the cream is heating, beat the egg yolks with the sugar until pale yellow and smooth. Strain yolk mixture into a clean bowl. Pour hot cream into egg yolks and stir vigorously. Return mixture to pan over low heat and cook, stirring, until thick enough to coat the back of a metal spoon. Remove from heat and allow to cool.
  • While custard is cooling, whip 10 fl oz. cream until soft peaks form. Place almonds on a baking sheet and toast, in a 300 degree oven or toaster oven, stirring frequently, until golden, 2 to 10 minutes.
  • Spread cooled custard over cake in bowl. Top with whipped cream and toasted almonds. Chill 2 hours before serving.

Treat your family and friends to this superb traditional boozy trifle full of sherry, raspberries and cream, especially popular at Christmas time. (Forget about counting calories until the New Year!) A trifle is a typically British dessert made with thick custard, fruit, sponge cake, fruit juice or alcohol, and whipped cream. Interestingly it was always made so as to use up, stale, left over sponge cake, which is then softened with either fruit juices or a sweet alcohol like sherry. It really is best not to use fresh sponge as it just goes very soggy and mushy. In the UK you can buy "sponge fingers" or "sponge trifle cakes" which are perfect, or if you have an Italian shop nearby, try ready made tiramisu sponge. It's really easy to make and the ingredients are usually arranged in layers with the fruit and sponge on the bottom, and the custard and cream on top. The best trifles contain a small amount of alcohol such as port, or, most commonly, sweet sherry or madeira wine. If you can't drink alcohol, you can use fruit juice instead, the liquid is necessary to moisten the cake. Trifle containing sherry is sometimes called 'sherry trifle' or referred to as being 'High Church'!! We often had a sherry trifle for dessert or tea on a Sunday afternoon, it was a delicious end to a lazy and relaxing day!

8 single trifle sponge cakes or 8 -12 ounces stale sponge cakes
4 tablespoons raspberry jam
6 tablespoons sweet sherry
12 ounces frozen raspberries, partially thawed or 12 ounces fresh raspberries
4 ounces amaretti or 4 ounces macaroons
1 pint milk
1 vanilla pod
4 egg yolks
1 tablespoon caster sugar, plus a little
caster sugar, for sprinkling
1 1/2 tablespoons cornflour
3/4 pint whipping cream
2 ounces sliced almonds, toasted
glace cherries or fresh raspberry, to decorate
silver dragees, to decorate

Steps:

  • Split the sponges in half then spread each half thinly with raspberry jam.
  • Sandwich each half back together and cut into quarters.
  • Place in the base of three and a half pint (2 litre) glass trifle bowl.
  • Sprinkle the sherry over the sponges and spoon over the partially thawed raspberries and their juice.
  • Roughly crush the ratafia biscuits and sprinkle over the raspberries.
  • Chill for 3-4 hours.
  • Place the milk and vanilla pod in a small pan and slowly bring to just below boiling point.
  • Transfer to a heatproof jug and leave to infuse for 10 minutes.
  • Remove the vanilla pod from the milk.
  • Place the egg yolks, cornflour and sugar in a bowl and whisk together.
  • Whisk in the milk, then strain the liquid back into the rinsed pan through a fine sieve.
  • Cook over a gentle heat , stirring constantly until the custard starts to thicken, being careful not to allow to boil.
  • Cook gently for two minutes unit the custard is a thick pouring consistency.
  • Quickly pour the custard into a cold bowl to prevent further cooking.
  • Sprinkle the surface with a thin coating of caster sugar to prevent a skin forming.
  • Set aside and leave to cool.
  • Spoon the cold custard onto the raspberries in the trifle bowl, spreading to the edges with a palette knife.
  • Gently whip the cream until it nearly holds its shape, then spoon three quarters of it on top of the custard and carefully spread to the sides of the bowl.
  • Whip the remaining cream until it holds it shape.
  • Pipe swirls of cream around the top of the bowl and decorate with flaked almonds and cherries, silver dragees or raspberries.

½ cup margarine
½ cup white sugar
2 eggs
1 ¾ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 pint heavy cream
¼ cup white sugar
1 teaspoon vanilla extract
1 (4.6 ounce) package non-instant vanilla pudding mix
1 (8 ounce) jar seedless raspberry jam
½ cup sherry
4 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, rinsed and sliced
1 pint blueberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x8 inch cake pan.
  • In large bowl, cream together margarine and 1/2 cup sugar. Beat in eggs, one at a time. Combine flour, baking powder and salt. Fold dry ingredients into butter mixture. Pour into prepared pan.
  • Bake 25 minutes, or until cake springs back when lightly touched in center. Cool in pan for five minutes, then remove from pan and cool completely on wire rack. Cut into narrow pieces about 1 1/2 inches by 4 inches. Set aside.
  • In large bowl, beat cream with electric mixer until soft peaks form. Beat in 1/4 cup sugar and vanilla and continue to beat until stiff peaks form. Set aside.
  • Prepare vanilla pudding according to package directions. Set aside.
  • To Assemble Trifle: Brush each piece of cake with raspberry jam. Use half the cake pieces to line the bottom of a trifle bowl or other glass serving dish. Sprinkle half of the sherry over cake. Layer half the peaches, strawberries and blueberries on top. Cover with half the pudding and a third of the whipped cream. Repeat layers with remaining cake, sherry, fruit and pudding. Top with remaining whipped cream. Chill in refrigerator at least 30 minutes before serving.

5 macaroon cookies, crumbled

2 cups whipping cream (or more!)
1 -2 cup sherry wine (or more!)
2 cups fruit cocktail, drained
2 bananas, sliced
2 cups fresh strawberries or 2 cups frozen strawberries (pureed, leaving 6-8 whole for garnish)
1 sponge cake, cut into cubes (see recipe below or use store bought sponge or flan cake )
5 eggs, separated
1 tablespoon lemon juice
1 cup sugar
1 cup flour
2 tablespoons butter, melted
1 teaspoon salt

Steps:

  • Spoon approximately 1/3 of whipping cream into bottom of glass serving bowl.
  • Next, a layer of 1 cup fruit cocktail, a layer of banana, a layer of 1 cup puried strawberries, and finally half of the sponge cubes.
  • Pour 1 cup of Sherry over cake cubes.
  • Put 1/3 whipping cream on top, and repeat with alternate layers of fruit cocktail, banana, strawberry, and cubes with Sherry.
  • Top with remaining whipped cream, and whole berries for garnish.
  • Sponge Cake: beat egg yolks and lemon juice until pale, add 3/4 cup sugar and beat well.
  • In a separate bowl, beat egg whites, add salt, and 1/4 cup sugar beating until stiff.
  • Stir 1/4 of the whites into yolk mixture. Spoon the rest carefully into yolk.
  • Sift flour on top, fold in melted butter until blended.
  • Preheat oven to 350 degrees F.
  • Pour batter into tube pan, bake 45 minutes (or until toothpick comes out clean). Invert and cool.

1 (16 ounce) package angel food cake mix, prepared in a loaf pan
½ cup cream sherry
1 (10 ounce) jar raspberry jam
1 ⅓ cups white sugar
⅔ cup all-purpose flour

4 cups milk
10 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
2 cups heavy whipping cream
1 ½ cups sliced almonds
12 maraschino cherries

Steps:

  • The night before, slice the cake into 1/2 inch slices and sprinkle with sherry. Cover lightly so it won't get stale. Let sit overnight to allow alcohol to evaporate.
  • To make the pastry cream: Mix sugar, flour and salt together in the top of double boiler. Slowly add milk to form a smooth mixture. Cook over low-medium heat stirring constantly until the mixture begins to thicken. Slowly pour 1/2 the hot milk mixture into a bowl of the beaten egg yolks, stirring constantly. Then pour all the mixture back into the double boiler and sir until thick. Add butter and vanilla. Chill.
  • The next day, spread raspberry jam on top of sherried cake layers (or ladyfingers). Layer the bottom of a bowl with 1/3 the cake and pour 1/3 of the pastry cream over the top. Sprinkle with nuts. Layer cake, cream and nuts until all of the ingredients have been used. Top the uppermost layer with whipped cream and garnish with maraschino cherries and slivered almonds. Refrigerate 1 to 2 hours before serving.

  • Cut pound cake in half lengthwise and trim halves to cover bottom of glass trifle dish, or a 9 inch straightsided glass bowl. Sprinkle cake with Sherry to soak, and spread cake with jam, heating jam if necessary to facilitate spreading. Place berries, kiwi and peaches on top of cake.
  • Heat the milk in top of double boiler over mediumlow heat until film forms on it. Beat the eggs with the sugar and vanilla in a double boiler until it forms a ribbon. Then slowly pour the hot milk into the eggs, beating all the time. Place the mixture in a heavy saucepan and stir over low heat until the custard coats the back of a spoon, 10 to 15 minutes. Don't let it boil. Strain it through a fine sieve. Cool the custard in a bowl set in ice water, stirring occasionally. Pour cooled custard over the fruit. Refrigerate, covered, at least 4 hours.
  • Whip cream to soft peaks. Beat in powdered sugar and continue beating until stiff. Spread whipped cream over the trifle and garnish with strawberries.

0.5 cup Heavy Cream
1 teaspoon Vanilla Extract
8 pieces Egg Yolks
4 tablespoons Sugar
2 tablespoons Cornstarch
1 bundle 9x13 white or yellow cake baked and cooled
.5 cup Sparkling Red Grape Juice
3 tablespoons Seedless red raspberry jam or preserves
2 cups Sliced Fresh Strawberries
1 cup Fresh Raspberries
1 tablespoon Sparkling Red Grape Juice
1.5 cups Heavy Whipping Cream
1 teaspoon Powdered Sugar
1 tablespoon Sugar

Steps:

  • For the Custard Combine the milk, heavy cream and vanilla in a heavy bottomed medium saucepan, stirring frequently. Heat the milk mixture over low-medium heat until it just begins to simmer and steam rises from the surface. Meanwhile, mix the sugar and cornstarch together with a fork. In a large mixing bowl, whisk together the egg yolks and the sugar mixture until light and smooth. HINT: I use my KitchenAid for this, but only as a stand. I hand whisk but use the bowl of the mixer attached to the machine so that I don't have to hold the bowl as well. This allows me to whisk and pour at the same time, which is needed in the next step. Remove the warmed milk from the stove and while whisking the egg yolks constantly, dribble a few drops at a time into the yolks. Adding the hot liquid very, very slowly in the beginning will temper the eggs, allowing them to warm gradually so that they don't curdle, or worse, scramble! Once you have dribbled in a good amount you can increase the amount of liquid you add at a time, whisking continuously until all the milk has been added. Pour the contents of the mixer bowl into the saucepan and heat over medium, stirring constantly. Keep stirring, ensuring that the milk mixture does not stick to the bottom of the pan, until thickened, anywhere from 2-6 minutes. Custard will be thick and smooth. Pour into a shallow bowl and cover the top with plastic wrap so that the plastic is touching the surface of the custard. This will prevent a skin from forming on top. Cool in the refrigerator until chilled. For the Cake Cut the cake into large manageable squares. Cut those squares in half horizontally. Open the squares so that the cut sides are facing up. Brush the cake with the cream sherry. Spread the sherries cake with the raspberry jam. Cut the cake into cubes. For the Fruit In a medium bowl, combine the strawberries, raspberries, sherry and sugar. Stir to coat and allow to macerate. Keep in the refrigerator until ready to assemble the trifle. For the Whipped Cream Combine the heavy whipping cream and the powdered sugar in a larger mixer bowl. Beat on high for 2 minutes, or until stiff peaks form. Keep chilled in the refrigerator until ready to assemble. Assemble the Trifle Place 1/3 of the cake cubes in the bottom of the trifle dish, jam side up. Top the cake cubes with 1/3 of the fruit, followed by 1/3 of the custard and finally with 1/3 of the whipped cream. Repeat layers two more times. Decorate the top with fresh fruit. Keep chilled until ready to serve.

A traditional trifle that almost every family has a version of. I can remember my mum putting tinned fruit cocktail in hers, I haven't included it as I think its awful, but feel free to add some if you fancy. Cooking time is chilling time.

1 cake (a madeira wine cake sliced into 1/2-inch thick slices)
10 fluid ounces whole milk
1 1/4 pints double cream
6 large egg yolks
1 tablespoon cornflour
4 tablespoons caster sugar
4 tablespoons raspberry jam
6 tablespoons sweet sherry

Steps:

  • Bring the milk and 10fl oz of the cream to the boil in a non-stick pan.
  • Beat the egg yolks, cornflour and sugar together in a bowl, then gradually whisk in the hot milk and cream.
  • Return the mixture to the pan and cook over a low heat, stirring constantly, for about ten minutes, until the mixture has thickened enough to coat the back of a spoon. Take care not to let it boil as it will curdle.
  • Transfer the custard to a bowl and leave to cool.
  • Arrange a single layer of the cake slices over the base of the bowl.
  • Spread the layer with 2 tbsp of raspberry jam and lay another layer of cake on top (you might not need to use all the cake).
  • Spread the second layer with another 2 tbsp of raspberry jam and sprinkle over the sherry.
  • Pour the custard over the cake, cover with clingfilm and chill for at least three hours.
  • Whip the remaining cream into soft peaks.
  • Uncover the trifle, spoon over the cream and return it to the fridge until you are ready to serve.
  • Decorate however you wish, hundreds and thousands and halved glace cherries are traditional.

This dessert recipe came from a friend from England, Gill Overfelt. She is one of the best people in the world (an angel in disguise!). It is delicious and elegant looking layered in a trifle bowl or individual dessert glasses.

2 (8 or 9 inch) white cake layers, baked and cooled
2 pints fresh strawberries
¼ cup white sugar
1 pint fresh blueberries
2 bananas
¼ cup orange juice
1 (3.5 ounce) package instant vanilla pudding mix
2 cups milk
1 cup heavy whipping cream
¼ cup blanched slivered almonds
12 maraschino cherries

Steps:

  • Slice strawberries and sprinkle them with sugar. Cut the bananas into slices and toss with orange juice. Combine pudding mix with milk and mix until smooth. Cut the cake into 1 inch cubes.
  • Use half of the cake cubes to line the bottom of a large glass bowl. Layer half of the strawberries followed by half of the blueberries, and then half of the bananas. Spread half of the pudding over the fruit. Repeat layers in the same order.
  • In a medium bowl, whip the cream to stiff peaks and spread over top of trifle. Garnish with maraschino cherries and slivered almonds.

From Pillsbury Easy Entertaining booklet 1993. This is a very pretty, company-worthy round trifle. This is perfect for the holidays. It isn't hard but it does take a very long time. It does not have to be overnight but you would have to start it very early. I have not tried this recipe yet. I had to guess at the prep time but it will be around 7 hours with all the sitting and refrigerating. Once the bread is baked the cooking part is done, however. I think for the bread I will try Cranberry-Orange Quick Bread #77086.

1 package pillsbury cranberry quick bread mix (or Date)
1/4-1/2 cup orange-flavored liqueur or 1/4-1/2 cup orange juice
1 (3 ounce) package vanilla, pudding and pie filling mix (not instant)
2 cups milk
1 tablespoon grated orange peel
1 cup whipping cream, whipped
1 (12 ounce) jar orange marmalade (1 1/2 c) or 1 (12 ounce) jar peach preserves (1 1/2 c)
1 cup whipping cream
1 tablespoon powdered sugar

Steps:

  • Heat oven to 350 degrees. Grease and flour bottom only of 8x4 or 9x5 inch loaf pan. Prepare and bake quick bread mix according to package directions. (Or make your own.) Cool completely.
  • Cut bread into 1-inch squares; place in shallow baking dish. Drizzle with orange liqueur. Cover; let stand for about 2 hours. Meanwhile, in medium saucepan combine pudding, milk and orange peel. Bring to a boil over medium heat, stirring constantly. Boil 1 minute; remove from heat. Cover surface with plastic wrap; cool 1 hour. Fold whipped cream into cooled pudding.
  • Line 2 or 2 1/2 quart bowl with plastic wrap. Spread 1 cup of the pudding mixture in bottom of bowl. Add 1/3 of bread squares; spread with 1/3 of the marmalade and 1 cup of the pudding mixture. Starting with bread squares, repeat layers 2 more times. Cover with plastic wrap; refrigerate at least 4 hours or overnight.
  • Unmold trifle onto serving plate. In small bowl, beat 1 cup whipping cream until soft peaks form. Add powdered sugar; beat until stiff peaks form. Frost trifle. Garnish as desired.
  • Presentation: The picture has almond slices along the bottom of the sides and orange curls and candied cranberries on the top. Around the trifle are very thin orange slices with a slit cut in one side so they can be placed in a swoop, almost a figure eight, with a candied cranberry in the center of each.

When I was in high school, I found this recipe in the Los Angeles Times. Although I never tried this recipe, I gave it to some friends who said the effort was very well worth the time it takes to make this. Prep time does not include standing time.

1 cup sherry wine (can use less)
2 cups strawberries, sliced
2 bananas, sliced
2 cups pineapple chunks
2 oranges, peeled and broken into sections
4 kiwi fruits, peeled and sliced
1 3/4 cups sugar
1 1/4 cups matzo cake meal
2 tablespoons orange zest, finely grated
12 large egg whites
1/2 teaspoon salt
2 tablespoons orange juice
1/3 cup sugar
4 1/2 tablespoons potato starch
4 cups strained orange juice
1 teaspoon orange zest, grated

Steps:

  • For the ANGEL FOOD CAKE:.
  • Combine 3/4 c sugar, matzo cake meal & orange zest in bowl.
  • Beat egg whites and salt in large mixer bowl until soft peaks form. Gradually add remaining 1 cup sugar, 1/4 cup at a time, alternating with orange juice. Beat well after each addition. Continue beating until stiff peaks form.
  • Fold in matzo meal mixture, 1/4 at a time.
  • Use 15 under-and-over strokes for each addition, slightly turning the bowl after each stroke. Fold an additional 10 strokes.
  • Pour batter into ungreased 10 inch tube pan.
  • Bake at 325 degrees 50 minutes to an hour, or until cake springs back to touch.
  • Remove from oven, immediately invert pan & cool.
  • For the ORANGE PUDDING:.
  • Combine sugar & potato starch in medium saucepan. Slowly pour in orange juice, stirring with whisk if necessary, to prevent lumps from forming. Add zest.
  • Cook over low heat, stirring constantly until mixture is smooth and thickened, about 20 minutes.
  • Cover & chill before using.
  • Can be made a day ahead.
  • PUT IT ALL TOGETHER:.
  • Cut cake in 1-inch fingers.
  • Let stand uncovered for a few hours to slightly dry out. (Trifle is usually made with stale cake.)
  • Arrange cake fingers around bottom and sides of deep glass bowl or trifle dish.
  • Sprinkle with 1/3 cup Sherry.
  • Arrange about 1/2 the sliced fruit on and around cake fingers.
  • Pour over 1/2 of pudding.
  • Add another layer of cake fingers.
  • Sprinkle with more sherry.
  • Pour over remaining pudding.
  • Cover and refrigerate until fully chilled and ready to serve.
  • To serve, heap remaining fruit on top of trifle and serve at once.

  • Place the cake in a glass serving bowl and cover with the canned fruit. Prepare gelatin according to package instructions and pour over fruit and cake.
