2 tablespoons olive oil
1 onion, chopped (about 2 cups)
2 small carrots, grated
1 red bell pepper, chopped (about 2 cups)
1 medium zucchini, cut into 1/2-inch pieces (about 3 cups)
1 clove garlic, sliced
Kosher salt and freshly ground black pepper
One 28-ounce can crushed tomatoes
6 English muffins, split
1 1/2 cups shredded mozzarella (about 6 ounces)
1/4 cup grated Romano cheese
Assorted toppings: sliced pepperoni or ham, cooked sausage or bacon, olives, cooked chopped broccoli, hot pepper slices or pineapple

  • Heat the oil in a large pot over medium-high heat. Add the onions and cook, stirring, until softened and starting to brown, about 5 minutes. Stir in the carrots, peppers and zucchini and cook, stirring, until softened, about 15 minutes. Add the garlic, 1 teaspoon salt and 1/4 teaspoon pepper.   • To make ahead: Place the entire tray of mini pizzas in the freezer and freeze until hard, about 1 hour. Stack in a plastic freezer bag until ready to eat.
