CRAB SALAD IN ENDIVE LEAVES

Crab Salad in Endive Leaves image

I saw the lovely Giada de La make this on The Food Network last week, and HAD to do this for guests for lunch. Followed the recipe as written, except - as a Chesapeake Bay seafood lover, HAD to add a sprinkle of Phillips Seafood Seasoning. (NOT Old Bay --too salty!) Served with Recipe #137331 - Greek-Style Oven-Baked Lemon Parmesan Potatoes, by Kittencal. All were suitably impressed! Super simple, too !

SMOKED SARDINES RILLETTES

Smoked Sardines Rillettes image

Canned smoked sardines are easy to come by, and if you eat fish (especially if you are trying to find ways to eat more fatty fish because of their high omega-3 values), they should be a staple in your pantry. Look for Pacific sardines, which are a Best Choice on the Monterey Aquarium Seafood Watch list. (Atlantic and Mediterranean are poor choices.) Like the other rillettes posted on this week's Recipes for Health, you can use these as a spread for bread or crackers, or as a filling for peppers or endive leaves or cherry tomatoes. The rillettes also go well with lentils, like the smoked trout rillettes featured earlier this week. The crème fraîche is optional but recommended (you could substitute olive oil or yogurt); I like the way it loosens and enriches the mixture.

Tips:

  • Choose fresh, crisp endive leaves. Wilted or bruised leaves will not hold up well when filled.
  • Make sure the crab rillettes are well chilled before using. This will help them hold their shape when you are filling the endive leaves.
  • Use a piping bag or spoon to fill the endive leaves. This will help you create a neat and even filling.
  • Garnish the endive leaves with fresh herbs or a squeeze of lemon juice before serving. This will add a pop of flavor and color.

Conclusion:

Endive leaves with crab rillettes are a delicious and elegant appetizer that is perfect for any occasion. They are easy to make and can be prepared ahead of time, making them a great option for busy hosts. With their delicate flavor and beautiful presentation, these endive leaves are sure to impress your guests.
