Great salad you can serve on the side of a main dish or add roasted chicken and have as a meal! Chopped Belgian endive and radicchio can be substituted for the baby greens if you prefer a more exotic twist on salad recipes.

ENDIVE AND APPLE SALAD

Endive and Apple Salad image

This salad came to The Times from Kathryn Anible, a personal chef in New York, whose solution to adding color to your winter table lies in this fresh, crunchy salad. "I just like it because the endive is not frequently used in salads, and it tends to be a little bitter," she said. "The apple sweetens it up a little bit and makes it more approachable. It has a nice crunchy, fresh texture."

Tips:

  • Choose the right endives. Belgian endives are the best choice for this salad, as they have a slightly bitter flavor that pairs well with the sweet apples and dressing.
  • Use a sharp knife to cut the endives. This will help prevent them from tearing.
  • Slice the apples thinly. This will help them absorb the flavors of the dressing.
  • Toast the walnuts. This will help bring out their flavor and make them more crunchy.
  • Make the dressing ahead of time. This will allow the flavors to meld together.
  • Serve the salad immediately. This will prevent the endives from wilting.

Conclusion:

This endive and apple salad with cranberry dressing is a delicious and healthy dish that is perfect for any occasion. The endives and apples provide a crunchy texture, while the walnuts add a nutty flavor. The cranberry dressing is sweet and tangy, and it ties all of the ingredients together perfectly. This salad is sure to be a hit with your family and friends!
